Pepper Salt Prawns

Ingredients : 300g prawns, 1tbsp minced garlic, 1 tbsp chopped chilli, 1 tbsp chopped spring onon

Seasoning : ½ tbsp. salt, 1 tsp Sichuan pepper, 1 tsp pepper

Method : 1. Trim away feelers and legs from the prawns. Remove the veins. 2. Heat some oil for deep-frying to about 180C, put n prawns to deep-fry for about 30 seconds, remove. When the oil has heated up, return prawns to the pan to deep-fry further. Repeat 3 times. Remove and drain well. 3. Leave some oil in the pan and fry garlic, chilli and spring onion until fragrant, then toss in fried prawns and seasonings, stir briskly to combine well.
