Render bacon and boar bacon. Add onion, shallot, thyme, and garlic. Sweat until onions become translucent, careful not to burn the garlic. Add flour to form a roux.Add vinegar and sugar. Mix well and cook on low heat for a few minutes making sure the flour is cooked out.
