Zia’s Hot Chocolate

INGREDIENTS • 6 cups whole milk • 1 teaspoon ground cinnamon • ¼ teaspoon ground nutmeg • 12 ounces semisweet chocolate, chopped or broken into ½-inch pieces • 1 tablespoon granulated sugar

MAKES: 4–6 servings PREP TIME: 10 minutes COOKING TIME: 2 minutes

NOTE: Make sure you have a parent or adult help you make this recipe. DIRECTIONS: In a large saucepan, whisk together the milk, cinnamon, and nutmeg. Bring to just below a boil over medium-high heat. Remove the pan from the heat and add the chocolate and sugar. Stir constantly until the chocolate has melted and the mixture is smooth, about 2 minutes. Keep warm over low heat until ready to serve. Savor every sip!

Zia’s Crepes
INGREDIENTS • 4 eggs • 1 cup whole milk • ½ cup flour • 1 tablespoon sugar • teaspoon salt • 3 tablespoons butter, cut into about 10 cubes

MAKES: 8–10 crepes PREP TIME: 10 minutes COOKING TIME: 20 minutes

NOTE: Make sure you have a parent or adult help you make this recipe. DIRECTIONS: Preheat the oven to 150°F. Line a baking sheet with parchment paper. In a medium bowl, combine the eggs, milk, flour, sugar, and salt. Whisk until the mixture forms a smooth batter. Preheat a 10-inch nonstick frying pan or skillet over medium-low heat. Melt 1 cube of butter in the pan. Add ¼ cup of batter and quickly tilt the pan to form an even coating of batter on the bottom of the pan. Cook for 1 minute until set and slightly

browned. Using a heat-resistant spatula, carefully loosen the sides and gently flip over the crepe. Cook for 1 minute. Repeat with remaining batter and butter. Place the crepes on the prepared baking sheet and place in a warm oven, for up to 20 minutes, until ready to serve. You can use lots of things for crepe fillings! For sweet crepes, try sliced bananas and chocolate sauce, raspberry or strawberry jam, peanut butter and jelly, or chocolate-hazelnut spread. For savory crepes, try ham, bacon, cheese, mushrooms, or spinach. Magnifique!
