EDITORS NOTE
Christmas needs no introduction, and if ever there was a time for eating this is it, so with this edition we bring you some great suggestions for festive dining in Bali. The 5-course Christmas Lunch menu at Mase Kitchen and Wine Bar (p26) brings a tropical island twist to traditional Christmas fare, complemented by an extensive selection of wines. The decorative Christmas window at Casa DAngelos (p64) is bound to get you in the spirit, and this is the place to stock up on all your festive goodies, like continentalstyle cakes, home baked ginger bread and smoked goods. This months Musings (p22) article looks at festive traditions from around the world. On our cover, Cosmic Diner (p38) is all about comfort food and has opened a second branch at Lippo Mall, just in time for Christmas. Fabulous burgers, shakes, waffles and pancakes served up in a gloriously retro setting will definitely bring a smile to your face. This month we also meet the charming new Italian chef at Bella Cucina, Intercontinental, Jimbaran, (p34) and are lucky enough to try his brand new menu which he describes as Hendra Oktaviano Editor-in-Chief A journey of the senses. Those looking for adventure (and great food) will enjoy the newly opened Ubud Adventure Centre, (p46) a base for rafting, trekking and cycling tours with a good range of dining options as well as spa, gallery and bakery. Lets eat Culture explores the interesting ritual of Siwaratri, the day of Shiva, which takes place in January. After nearly five years with Lets eat! magazine the time has come for me to move on, and I would like to take this opportunity to offer my heart-felt gratitude to all the team and of course to you our readers. Alison is a travel writer and self confessed food-lover. She has spent many years traveling the globe, immersing herself in foreign cultures and sampling local cuisine, applying her motto Everything should be tried at least once. Menur describes herself as a part-time food lover and a fulltime food friend. She enjoyed her exposure to many different restaurants during her year teaching Indonesian Language and Culture in Washington DC. Now back in Indonesia she has discovered that her pleasure in trying new food has deepened and she hopes to one day open her own restaurant.

Eve is the newest member to join the Lets Eat team and says her familys motto has always been live to eat, rather than eat to live. Aside from eating she also loves to write, travel, design and cook (although, admittedly that also involves eating.)

Dewi admits to falling in love with writing and photography. Her wandering feet have taken her travelling all around the archipelago before finally settling in Bali where she set to work capturing the authenticity of the island in words and images.

In keeping with the restaurants name, Bubu are used as decorations throughout the restaurant. Inside, Bubu chandeliers dangle above bamboo tables, while a romantic outdoor evening setting is complemented by glowing bubu-shaped lanterns hanging from the trees. The restaurant is on the right hand side, as you drive into Nusa Dua, just look for the alang-alang roofed gazebos circling a fish pond. However the real welcome is a display of live and fresh seafood at the entrance where you can choose your own fish for lunch or dinner. We head to one of the gazebos, take off our shoes and sit on the batik cushions, letting out feet hang over the pond, which is covered in a net should we drop anything a great idea. Each gazebo is vey practical and convenient with individual fan and an electric outlet for charging cellphones. Our feast starts with Karedok, a dish that never fails to impress me, with its fresh raw vegetables mixed with brown nut sauce and Asian basil leaves adding fragrance. The crispy Prawn Tofu is a great snack before the main course and is made of prawn-filled tofu with a coconut-based sauce that tastes sour and a little spicy. But thats not the only dipping sauce at Bubu. Every table is served with crackers and four kinds of sambal; Sambal Matah, Sambal Bubu, Sambal for Grilled Seafood and Sambal Goreng. Thats what I call real options.

Bubu is a one-stop restaurant for seafood and Indonesian cuisine, and brings the flavours of Jimbaran to Nusa Dua by serving Jimbaran-Style Grilled Clams, which has always been my must order item whenever I go to Jimbaran. It is done well at Bubu, with candlenut sauce on top of each grilled clam. The Gulai Ikan is an Indonesian gulai-style fish soup that can be served with your choice of fish, but the red snapper is recommended. After all the seafood

and Indonesian food, we close our day with Es Campur, a local dessert with fermented cassava, sticky rice, coconut, condensed milk, syrup and other fruits and sweet items. Located on the Nusa Dua Selatan main road, Bubu is a restaurant that caters to big groups, meeting and functions. They have a couple of VIP rooms that can turn into a hall for 200 people upstairs. The Candy Cane came to be when a choirmaster at Cologne Cathedral in Germany asked a local candy maker for some sweet sticks to quiet the children who were making noise during the living crche tradition of Christmas Eve. A candy cane is a cane-shaped hard candy traditionally made during the Christmas holiday season.

Christmas food traditions vary greatly around the world. Puerto Ricans make pastels, the Dutch eat roast duck, the Mexicans steam enormous batches of tamales for large gatherings, and in an international community like Bali, we get to experience a melting pot of traditions and kitchens all celebrated in one place. Perhaps the most common Christmas time treat is our good friend the gingerbread man. Supposedly the first figure-shaped gingerbread cookies were made in the 16th century, in the court of Queen Elizabeth I of England. The queen had the gingerbread figures made and presented in the likeness of some of her important guests. It has since become a Christmas mascot for food, and recipes have changed little since that time.

world! The celebration of Christmas falls on the 25th of December, commemorating the birthday of Jesus Christ, the Christian son of God and the saviour of mankind. Christmas is celebrated with traditions of exchanging gifts with family and friends, singing carols, decorating and lighting Christmas trees, and of course, indulging in a feast of delicious foods and treats! Many non-Christians (mostly from the west) celebrate Christmas too, as it is has become a cultural tradition and an integral part of the Christmas holiday season, so almost everyone gets to enjoy the fun.

For those from the west the most anticipated dish is probably the Christmas turkey. There are many types of turkey dishes. In North America, they prepare roast turkey for their Thanksgiving and Christmas feasts, while in Europe they serve up turkey stuffed with herbs, spices, and vegetables. World-renowned chef Gordon Ramsay uses a traditional Christmas recipe that contains breadcrumb and herb stuffing; using thyme, rosemary, and parsley leaves for the herb butter, and sage, lemon, pine nuts and onion for the stuffing. On the west coast of America, San Franciscans serve up cioppino, a tomato-based fish stew made of a mix of the best fish fishermen would have caught in a day. It is perhaps the most iconic San Francisco dish, and it has made its way around the world as a holiday dish.

Over on the other side of the world, in the Republic of the Philippines, they serve a slightly sweet, moist cake made with cassava or rice flour called bibingka, which is cooked over a charcoal fire in a banana-leaf-lined clay pot. It is traditionally eaten after Midnight Mass on Christmas Day. Another winter treat that actually originated in the United States is the popular beverage eggnog. Eggnog dates back to the late 1700s. Over time this rich and creamy drink has evolved and now typically uses rum in its recipe. If you are in Bali you will most likely get to experience some delicious dishes so dont forget to take the opportunity to try the Christmas specials on the menu! Good tidings and Merry Christmas!

I have driven past Mase many times and always thought that it looked like a lovely place, stepping inside today my impressions are confirmed. While technically this isnt a new restaurant, the addition of a Wine Bar and a revamped menu to pair it with is. Exposed brick walls, natural timber, and floor to ceiling windows lined with wine bottles creates a contemporary wine bar feel; and with 80 reasonably priced wines on offer, including plenty of options available by the glass, there is something for every occasion. Enjoy AC comfort inside, or take a seat on the shady deck overlooking a beautiful swimming pool fringed by vertical gardens. The overall effect is tranquil and stylish, equally suitable for reclining in a leather sofa with a magazine or book off the shelf, or sitting at a marble topped-table for a 4-course gourmet meal complemented by a fine selection of wines. The Ippolito Coffee bar on the terrace also serves up delicious coffees, roasted and ground in-house.

International influences are apparent in a menu that includes everything from Escargots to Seafood Chowder, Thai-style Pork Salad, pastas burgers, and Australian Rib Eye. The Mahi Mahi Meuniere is justifiably one of the most popular items on the menu and sees a thick juicy fish fillet smothered in a divine lemon butter sauce infused with fresh basil and parsley, with green peas mashed potato and lightly steamed vegetables on the side. While the Ayam Panggang Bali is an ode to the island, a classic spicy dish of chicken breast, rice tower, lawar kacang vegetables and a fiery sambal matah. Alison

Dijon mustard and soft green Madagascar peppercorns that give a sharp taste. Then Coscia dAnatra alla Fiorentina is served, an imported duck leg that has been marinated for 24 hours before being grilled and served with mashed pumpkin, beetroot, fresh orange and Italian Balsamic vinegar reduction. The plate is colourful and the taste flavourful, balancing the soft textured pumpkin with tender duck leg and a hint of citrus. Everything that comes out of the kitchen look beautiful, and it feels more like I am eating in a restaurant in Seminyak. The end of the savoury dishes means the beginning of the sweets, and we have a decadent Lime Cheese Cake decorated with a round caramel cracker on top. Its never too early, or too late to have cocktails, especially in Kuta, and Vi Ai Pi has always done great drinks. We end with a very large Amnesia; I dont even want to know which 20 liquors are put into this drink but am thankful there are five straws so I can share it with Jack, Comparin

When asked why its called Vi Ai Pi, General Manager, Jack replies, Kuta is a party place and we try to bring the Kuta party lifestyle to a different level with better cocktails, better food and better ambience. Drinks and food are well prepared and nicely presented with Italian flavours as the main focus. Live music is served fresh every evening from 7pm to midnight and the party continues well into the night. Located on the first floor of the black building opposite the Bali Bomb Monument, Jack adds, We are developing a whole new concept on the second and third floors in December, with a club and KTV rooms to cater to an even broader Kuta market, and further enliven the already-famous Legian party street. We met Federico Comparin, Vi Ai Pis Food and Beverage Consultant to take a sneak peek at the kitchen and he explains that the restaurant is going through an evolution with its menu. We make our way through the beautiful landscaped gardens of Intercontinental Bali Resort, to arrive at Bella Cucina, where an elegant interior manifests in starched white tablecloths, gold embossed napkin holders, glistening marble-top counters and sprays of orchids. Born in the southern region of Puglia, an area famed for its fresh produce, the young

Riccardo Ioanna would help out in the family restaurants, and watch as satisfied customers would head to the kitchen to profusely thank his parents for the great food. He wanted to spark this kind of happiness too, and a life long passion to cook was born. After studying, he worked in kitchens around the globe, including stints in London, New York, Dubai and most recently in a scene straight out of lifestyles of the rich and famous on the largest privately owned yacht on the planet, named The World.

Since joining Bella Cucina in September, Ioanna has been hard at work creating a comprehensive new menu with all manner of interesting dishes that honour authentic flavours, while giving a modern twist to the presentation. Its a trip with the mind and senses he explains, I want the bouquet to take you from here to Italy. He also enjoys chatting with his guests, and likes to tailor-make dishes based on specific requests and preferences. The Insalata di Polpo is a fresh and light octopus salad. The warm, tender octopus has been boiled in a stock of fish and vegetables, and served with baby potatoes, red bell peppers, green beans and a smooth lemon and olive oil emulsion. The mildly sweet, deep red Taggiasce olives are a lovely addition. Pasta is homemade in a variety of styles, including a very good Tortellini di Anatra with a filling of duck confit mixed with ricotta, parmesan, thyme rosemary and garlic, and served with a hearty beef and duck consomm with vegetables fricassee.

The Lombo di Agnello in Crosta di Caffe, is an Australian Lamb loin brushed with illy coffee, salt and black pepper. The coffee is gently absorbed into the meat as it roasts, imparting a deep rich flavour and creating a tasty crust. Roast pumpkin and a hearty tomato concasse sauted with Parma ham, lemon skin, olives and capers complete the dish. For dessert there is no going past the Tiramisu Riposata served wonderfully soft and chilled. 48 hours resting in the refrigerator have allowed the flavours to develop and mature, and the layers to soften into a luscious, melt-in-your mouth dream of a dessert. I recommend the Bellini as a aperitif, and there is a good selection of wines and cocktails to complement your meal. Cheekily named Your Dentists Favourite, my stack of fluffy fat pancakes are topped with mint chocolate ice cream and drizzled in chocolate sauce, with a final decadent sprinkling of chocolate chips. And then there is my personal favourite of all American diner foods the waffle! But its a tough choice. Do I want a Match Made in Heaven with strawberries and caramel gelato, or maybe a Cheeky Monkey with chocolate and banana? Finally I settle on a Summer in New York, two delicious golden waffles, dusted with icing sugar, scattered with fresh strawberries and orange segments, and crowned with blueberry gelato and chocolate sauce. I arrived in Vienna on the most bone-chilling, windy day during the autumn. My resolution for the next five days was pretty simple: visit as many museums as possible, eat everything and save the nights for concert and theater. Visiting the local markets is also a top priority when I travel, and on that day the Naschmarkt was at its busiest due to the opening of a Saturday flea market. Fresh products were stacked beautifully next to home-made jams and breads. The wafting aroma of grilled lamb kebab was competing with the aroma of pommes frites. They take their french fries seriously in Vienna, serving only the hand-cut, crispy golden fries.

Freud and even Vladimir Lenin were said to be regulars. I believe you have to be in cold weather to be able to appreciate the heat emanating from a bowl of goulash soup, which envelops you with its warm beefy hug of paprika and spices. A flaky apfelstrudel with warm vanilla sauce and whipped cream became my last dessert in this enchanting city of music, art and culture. There is something about this city that invites you to think and to enjoy life at a leisurely speed or, preferably, waltzing. One night, while munching on a giant sausage with cheese in a wrstelstand I started chatting with a priest who told me, Austrians are known for being grumpy, distant and speaking only in German, but if you ask us something nicely, you will be quite surprised. The fact that I had a conversation with a Catholic priest on a hot dog stand late at night pretty much sums what Vienna is all about. Eve

ienna is divided into 23 districts and I believe each district is secretly competing with each other in having the most delicious eatery or

exciting neighbourhood to visit. After completing the tour of the day in Museumquarter, I found myself quite famished, freezing and forlornly searching for the most authentic wiener schnitzel in Vienna. On my left I found a restaurant called Zu ebener Erde und erster Stock, in an enchanting old house. The owner, a warm host with a proud Austrian moustache greeted me and made me instantly feel at home, especially after a glass of beer. The much anticipated thin, breaded and deep fried veal finally arrived and it was wonderfully succulent. A Sacher torte or chocolate sponge cake with a layer of apricot jam and dark chocolate icing on top was a fantastic way to end the meal. Before watching an English play at a theater on my last night in Vienna, I managed to sneak a taste of goulash soup at the historical Cafe Central where Sigmund

Flourless Chocolate Cake

While the stylish new Ubud Adventure Centre only opened its doors in July 2013, the real story begins back in the 1980s when an English man named Nigel Mason fell in love with the island, and a Balinese woman named Yanie. The couple soon opened Yanies, a buzzing, much loved restaurant in Kuta, before going on to set up Bali Adventure tours in 1989 and the Elephant Safari Park in 1997. The original Yanies closed sometime ago, but has been reborn as a semi fine dining restaurant at the new centre. Mason has always been actively involved in every aspect of the family business, whether staging the dramatic rescue of elephants from Sumatra; creating a world class white water rafting experience on the Ayung River; personally collecting the Japanese artwork that adorns the Ubud Adventure Centre, or collaborating with the chef to create the menu for the new Yanies.

Helping out in the family restaurant in Germany when he was a child sparked a life long fascination with cooking for Chef Kormoczi. After finishing my studies, I travelled to Hong Kong and Indonesia, right then, I decided I would work in South East Asia someday. His wish came true when he moved to Bali in 2008, and went on to join Grand Nikko Bali in 2012, revamping the menu to offer guests delicious and healthy choices. Q: What is your favourite dish to cook at home?


CHEF AGUS: Usually Balinese food but I also work with any ingredients available in the kitchen or as my family requests. CHEF ATTILA Im a meat lover so I enjoy roasting and setting up a BBQ.

Q: Is there any special Christmas menu that we

CHEF AGUS: At Bambu Restaurant, we have a more traditional offering such as turkey, cold cuts and pastry. At JuMaNa, we have a special menu following our French - Japanese fusion cuisine. Q: Do you have a certain habit to start the day?


CHEF AGUS: The most important thing is to get ready physically and mentally. Then I make sure the kitchen is clean and set. CHEF ATTILA: Coffee, shower and cigarette to start and plan the day ahead so that Im always ready when I arrive at work.

Q: How do you dene a good Christmas celebration?


CHEF AGUS: Being together with my family and having good traditional food. CHEF ATTILA: There should be a tall, beautiful Christmas tree and a good dinner, at home or out, but most importantly with my family. I like to keep it traditional.

Q: Can you give us a glimpse into your future plans?


CHEF AGUS: Id like to own a farm where I can grow all sorts of vegetables and livestock, with a small restaurant attached to it. CHEF ATTILA: I will still be around in Bali for sure! I love living here.

year. The global economy remains quite weak and Indonesia is not immune from this, though it is still much better positioned than many other economies to deliver growth. 2014 may turn out to be a bit of a transitional grind. Chefs and their restaurants will need to be more creative in terms of the product they serve and the costs within their business. My experience through other crises, and my best advice is: When times are tough, dont look for cheaper ingredients. Compromising the quality of your dish is a killer. Look elsewhere to trim costs if you need to, or raise prices.

Q: Despite the traffic, how do you like living in Jakarta?

A: Its a very exciting city. Im


coping with the traffic as much as everybody else, but I like Jakarta. The food scene is great. Pork leg/ bacon Salted water 400 grams butter 7 eggs 200 ml white wine 1 lemon 10 white pepper corns 10 coriander seeds Cloves, star anis Shallots & garlic Potatoes Parsley Asparagus

Methods
Set the pork leg/ bacon in salt water (30 grams per litre of water) sprinkle with cloves, star anis, chopped shallots and garlic and leave for two nights. Remove the brine, cover in foil and cook at 90 degrees Celcius for 11 hours. Increase the temperature for one further hour to crispen. Peel the potatoes and boil until soft. Strain, add butter and parsley,keep warm. Cook eggs for seven minutes in boiling water, peel and keep warm. Cook the asparagus for five minutes in salted boiling water. Finally prepare the hollandaise sauce by reducing white wine with juice of one lemon, shallots, white pepper corns and coriander seeds until remaining liquid is one third. Strain and cool. Add six egg yolks and whisk until the sauce starts to thicken. Place on a low heat and keep whisking until soft peaks start to form. Slowly add 300 gram of softened butter. Now relax and enjoy a special homemade dinner with the most special people in your life

A Continental Christmas

Stepping into CasaDAngelo, my first thought is of a quaint continental bakery, and the shop is so filled with cakes and pastries that I dont know where to look first. The front window is heaving with gorgeous Christmas fare, from a cute ginger bread house, to glistening chocolate logs, sugar dusted mince pies and iced buns sprinkled with almonds. A central table is dedicated to savoury items like Ricotta and Spinach, Chicken Crepes, sandwiches and tarts, and a whole wall is lined with European style loaves, including dark rye, corn bread and crusty baguettes. I spot tiered cake stands laden with pretty chocolate-topped muffins, baskets of Polish Croissants, shelves heaving with homemade jams, gourmet coffee and cellophane wrapped biscotti bound with satin ribbons. Polish-born Robert has lived on the island for the last 15 years and describes how he wanted to create a Family store with a little bit of everything, a place to buy daily necessities, like milk, bread, pate, home cured meats, pastries, coffee and wine. He has succeeded, and CasaDAngelos definitely has that welcoming neighbourhood vibe that comes from being in a residential area.

I choose a Baked Ricotta Cheesecake that turns out to be quite exceptional. The ricotta is made on the premises and has a slightly sour taste combining with bitter dark chocolate base, and a sprinkle of icing sugar on the top to sweeten things up. The fridge also proffers Tiramisu, a bulging Carrot Cake with thick cream cheese icing, and a glistening Black Forest Cake, alongside fresh homemade soups, pates, humus, and cream cheese. A continental-style Christmas is assured with everything from English fruit puddings, to Italian Panettone and Polish poppy seed cake available for order. The finishing touches are being applied to the smoke room when we visit, so you will also be able to stock up on home cured mackerel, bacon and hams.

Its easy, get hold of a shoe box and decide whether your gift is for a girl or boy and what age, then label it accordingly and fill it with school supplies, clothing, toiletries toys or art gear, and perhaps a personal note.
