KOREAN BLACK BEAN NOODLES

Ingredients:
1/2 Cup Korean Black Bean Paste [Jjajangmyeon 1 TBSP per serving]
1.5 Lbs. Pork Belly Cubed inch pieces [...substitute meat, seafood or use mushrooms for vegetarians.]
3 Medium Potatoes Cubed inch pieces
1 Lg. Onion Cubed inch pieces [around 1.5 cups.]
1 Lg. Carrot Cubed inch pieces
3 Cups Cabbage Cubed inch pieces [the amount becomes a matter of preference.]
1 Cup Korean Radish Cubed inch pieces
1 Cup Zucchini Cubed inch pieces
2 Korean Peppers Chopped
1 Modesto Red Pepper Chopped
3 Jalapeo Slices
3 TBSPs Cooking Oil
1/2 Cup Packed Brown Sugar [Ive also included an amount of rice syrup.]
1 TSP Salt + 1 TBSP [teaspoon for marinade and tablespoon for the fry pan.]
1/2 TSP Ground Black Pepper
1/2 TSP Ground White Pepper
5 Garlic Cloves Minced
1 TBSP Ginger Minced
1/4 Cup Cooking Wine
2 TBSPs Corn Starch Powder
1 TSP Sesame Oil
1 Cup Water [do not add water if the vegetables produced enough liquid for a quantity of sauce.]

1st Evolution:
Marinate the Cube Pork Belly with Cooking Wine, Salt and Pepper for one hour.
2nd Evolution:
Add Oil to Frying Pan and stir in the Black Bean Paste over medium heat for five
minutes. Then add Sugar and stir one minute.
3rd Evolution:
Add Marinated Cubed Pork Belly, cook until fried down and drain off excess liquid fat.
4th Evolution:
Add Potatoes, Carrots, Korean Radish, Zucchini, Peppers, Garlic, Ginger, Salt, Black
Pepper, White Pepper, and cook twenty minutes.
5th Evolution:
Add Cabbage, Onion and cook to desired consistency.
6th Evolution:
Add Water only if the vegetables did not produce enough liquid. Add Sesame Oil. Taste
and add Salt and Sugar if desired. Thicken with Corn Starch Powder and cold water.
Serve over Noodles or with Rice.
Note: I have substituted chicken for pork occasionally and have attached measurements
that you may adjust in time to suit your own taste. A recipe might have a given
foundation, but can be taken in a number of directions to become uniquely your own;
e.g., look at how many ways there are to bake bread.
