Microwave Cheesecake Pudding

cup + 2 tablespoons Tofutti cream cheese cup Tofutti sour cream 1 egg juice and zest of lemon 1 tsp vanilla 2 Tbsp sugar Mix all ingredients thoroughly in a microwave-safe bowl. Cook on high heat for 120 seconds, stirring well every 30 seconds incorporating all ingredients. Refrigerate until serving. Sprinkle with graham cracker topping.
Graham Cracker Topping 1 tablespoon crushed graham crackers 1/2 teaspoon melted coconut oil Mix graham cracker crumbs and melted butter together in a small bowl.
