Recipes Crispy Ranch Chicken Minutes to Prepare: 10 Minutes to Cook: 35 Number of Servings: 4

Ingredients

4 boneless skinless chicken breasts 1 oz pkg ranch dressing mix 2 cups crispy rice cereal 1/4 cup grated parmesan cheese 2 egg whites (beaten) 2 tablespoons light butter (optional) Directions Mix rice cereal, ranch mix and parmesan cheese together in bowl. Dip chicken in egg whites, then in the cereal mixture to coat evenly. Arrange chicken on greased baking sheet. Bake until golden. 30 to 35 minutes. I used bread crumbs instead of crispy rice cereal, but I think next time I would use less because I had so much left over. I also added a little fat free plain yogurt to the egg whites for a extra flavor. I will totally make these again! - 2/1/09 This recipe was amazing! I used a pre-made frozen pie crust ( not too many more calories). It was beyond moist and oh sooo delicious!!! . Next time I think I'll add green chilis and chipotle tabasco sauce I absolutely LOVED this recipe and so did my family!! Only thing different I did was add taco seasoning to the meat and added 2 cups of cottage cheese along with two eggs for the topping over the meat.Very good.1/7/10 Thie was a MAJOR score at our house last night!!! not a crumb left!! I used 3 tbsp worchester and a bit more garlic :) My husband said "now we just need to work on our portion control :) We made this last night without the cottage cheese and it was SO GOOD! We added fresh salsa on top instead of the tomatoes and it was great .
