Do not be intimidated for
any reason. That is rule number
one (and there are very few real
rules after that). For the most
part, going wine tasting is about
the easiest thing in the world,
especially here in California
where wineries and tasting
rooms abound. You can find
wineries specializing in red
wines of all types, those that are
famous for their white wines
and others who pour sparkling wine. It is a matter of
doing a little research and planning your day. Most tasting
rooms open around 10 a.m. and close between 4:30 and
6 p.m.
Before you start off pack a few essentials: Water
(plenty of water) and something to snack on crackers or
a baguette. Many wineries have picnic areas and there are
plenty of delis and bakeries that can make up a lunch for
you, or make your own. Which brings us to eating and
drinking, the kind that doesnt directly involve wine.
Be sure to nibble during the day and make sure you
make time for lunch. Two tips: drink at least twice as
much water as you do wine, and remember that you
dont have to drink everything poured into your glass.
There is a reason tasting bars have dump buckets and a
pitcher of water to wash out your glass.
That said, here are some tips that have proven to be
helpful and are designed to help make the sensory
adventure of wine tasting all the more enjoyable.
Dont be afraid to ask questions. Time and time again
I have heard knowledgeable winery workers say that
there is no such thing as a stupid question, and they
mean that.
You can drink what you want, in the order you want.
If you only like reds, say so; if you dont like sweet wines,
speak up. But the idea of starting with whites, then going
on to reds and then sweet wines is a good guide.
Zinfandel is red. I am sure you know that but it never
hurts to remind everyone.
If there is a particular wine you want to try and it is
not on the list, ask. There might be a bottle around that
was opened for a trade tasting or by the winemaker. Most
tasting rooms are happy to pour a little if you show
enthusiasm.
If you plan to take wine home with you, either in the
car or on a plane, buy a
cardboard box with Styrofoam
wine inserts. Fill it during the
day and this keeps wine from
rolling around in the trunk.
Check out the smaller
wineries. It is a revelation.
Take notes on the wines you
most enjoyed.
Take advantage of tours
when the winery offers them,
but keep in mind that they take
anywhere from 20 minutes to well over an hour, so one a
day is plenty.
Buy wines that you can only find at the winery.
These often include smaller (375 ml) bottles of limited
production Ports or dessert wines. Dont buy a wine you
can get at a supermarket back home. Youll pay more,
and besides, whats the point?
Look for tasting rooms in towns. Many of these are
cooperative tasting rooms, where in one place you might
find wines from a dozen or more small-to-medium
premium producers. They are scattered throughout the
area and more are opening all the time.
Dont give too much thought to ratings and vintages.
Its like art: if you like it, its a good wine. It is as simple as
that.
Remember that you dont have to do the driving. It
takes no more than a phone call to rent anything from a
Town Car or restored classic convertible to stretch limos
and a 20-passenger bus. All have drivers that will stow
your wine for you and the local companies know the
area. As to taking that wine home, ten people sharing one
of those impossibly long limousines is fine and fun, but if
you all plan to buy a couple of cases the trunk which is
no bigger than a normal luxury cars is going to fill up
fast and youre going to find yourself filling the interior
floor with boxes and using cases of Cabernet as footrest.
Tell the transportation company what you have in
mind and listen to their advice. They know the territory
and the people and personalities.
Know your limits. If you get close to it let others taste
and you can listen. It beats ending the day in a blur, and
if need be calling a taxi is cheaper than the alternative.
And if at a seated tasting, dont be afraid to leave a
gratuity. Its more than worth the five or ten dollars to get
wisdom and wine and a great time. BY CHARLES NEAVE

An acre of vineyards land can give the grower:
Five tons of grapes (though it is also less, depending
on a variety of farming and winemaking practices,
and on the varietal and the vineyards location)
which will give you 797 gallons of juice (or thirteen-
and-a-half barrels) which is pretty close to four thou-
sand bottles of wine .
One standard oak barrel of wine holds:
295 bottles of wine (or 59 gallons) made from 740 pounds of grapes
which works out to almost but not precisely - 24 cases of wine.
One of the most asked questions asked when it comes to wine is how much of this does it take to make that, and so on. We
wont pretend that is simple, but here are some industry statistics that will give a pretty good answer to that query. As with
anything agricultural, of course, they are all based on countless variables when it comes to acre yields, but this is a good
starting point. The rest of the information varies little if at all.

Do the Math
What does all that information on a wine label mean?
The U.S. Department of Alcohol, Tobacco & Firearms regulates wine
labels and requires that information be given in a straightforward
way. Basically, you will want to look for the types of grapes grown,
where the grapes are grown and when the grapes were picked.
Brand name
Designation for a special wine
Vineyard or appellation known for its grapes might be designated
Location where the grapes used were grown
Grape Variety used
Vintage year in which the grapes were picked
Location where the wine was made and/or bottled
(Not to be confused with the area the grapes are grown.)
Alcohol content may be stated or the the label may simply say "Table Wine

A dozen 750 ml bottles

which comes from
30 pounds of grapes.
A single bottle contains:

about 2.4 pounds of grapes (39 oz.) and is enough
for four or maybe five glasses.

Zinfandel on the Central Coast
dates back to the 19th century
before prohibition. From the west
side of Templeton, to the Santa Mar-
garita Ranch, and to the back roads
of the eastside of Paso Robles
Padres, ranchers, and even a Polish
concert pianist have cultivated the
rich and robust varietal for close to
200 years. Each of the different
microclimates and each of the
distinctive personalities have pro-
duced unique styles of Zinfandel.
This piece of history has carried
through to todays Zinfandel. You
can find ripe and juicy Zins with
their signature peppery finish. Also
accessible are the earthy and elegant
styles with a richer mid palate.
Truly, there is a Zinfandel for every-
one on the marvelous Central Coast.
While driving from Highway 46
East to 46 West, much of the visible
vineyards are planted to Zinfandel.
Head pruning is a style of farming,
usually specific to the variety, which
you can find on many properties in
the area. Farming this way is quite
labor intensive and often more
costly. However, the product makes
it all worth it. Zinfandel grapes from
these head pruned vines are ultra
concentrated, made for those who
crave a true big and bold red wine.
Pair a bottle of this wine with a steak
and call it a perfect evening!
Since Zinfandel from the Central
Coast was first recognized by serious
wine connoisseurs in the late 1880s,
the buzz around the wine has not
subsided. Bottlings from the winer-
ies in the area continue to receive
high acclaim and are enjoyed by
oenophiles around the world.
The third weekend in March, every
year, is dedicated to ZinFest in Paso
Robles. At this time the true Zin
lovers come to town to quench their
thirst. However, it is easy to find a
delicious Zinfandel year round.
Now get out there and start tasting!

OVERALL PHILOSOPHY
People and award-winning wines,
its a happy combination.
PLAN AHEAD FOR
During harvest you can cast of your shoes and stomp
grapes barefoot, I Love Lucy style!
WHERE IT ALL STARTED
The name Opolo, from Quinns Yugoslavian heritage, is in
reference to a ros-style wine made on the Dalmatian
Coast. Every weekend youll fnd the barbecue fred-up
with Ricks cevapcici, a Serbian beef and lamb dish, or
their gourmet pizzas from the wood-burning pizza oven,
all paired with one of their fabulous wines.
THEIR UNIQUE APPROACH
With the very best in fruit available to them, Opolo has
chosen an interesting path to winemaking. Curiously,
Opolo does not employ a winemaker as such. Its a group
efort. Everyone, from owners to cellar rats have a say in
the wine production. The belief at Opolo is that this ap-
proach makes for consumer-friendly wines that appeal to
many people.

Mention Day Trips and receive complimentary tasting for two.
Visiting the mountain top where Opolos highest-elevation
vineyard grows explains why co-owner Rick Quinn envi-
sioned building his estate here. Pinot Noir, Sangiovese and
Zinfandel excelled here, proven by the vintners who began
planting those varieties 17 years ago. Still, Quinn and his
partner David Nichols know it takes more than spectacular
views to attract wine connoisseurs.
The friendly, tasting room staff takes the intimidation
away from wine tasting, making the experience enjoyable for
everyone. With enticing aromas wafting in from the winerys
barbecue to the laughter and frivolity of the tasting room, you
know you are in for a good time. There is perhaps no more
entertaining or relaxed winery experience to be had on the
Central Coast. This is serious wine combined with serious
fun!
The wines are mostly estate grown, which sets them apart
from many other Central Coast wineries. In 1999, Opolos
first vintage, they made Merlot, Syrah, Cabernet Sauvignon,
Sangiovese, Zinfandel and Muscat Canelli. Theyre respected
for classic reds, yet theyre equally passionate about their
whites, including: Viognier, Roussanne, Pinot Grigio and
Chardonnay. Their exceptional blends include: Rhapsody, a
Meritage; Montagna-Mare, Barbera and Sangiovese; Fusion,
Cabernet Franc and Merlot; and several others.
Opolos latest addition is a romantic bed and breakfast
among the grapevines where guests can enjoy the idyllic
dream of living in wine country. By Ronda Giangreco

2-for-1 tasting: Purchase one, receive the second complimentary.
In their tiny winery, tucked away on a sun-drenched hilltop on
the Westside of Paso Robles, proprietors Brock and Michelle
Waterman personally hand-craft all of the wines they produce. In
1998, after discovering and then falling in love with Paso Robles
Zinfandel, they purchased their 20-acre property and planted their
very own Zinfandel vines. Brochelle Zinfandel is very unique because
it is farmed the old-world way: head pruned and dry farmed. Doing
this creates wines rich in character, voluptuous in flavor and
extremely elegant on the palate. Brochelle was created by a marriage
of the proprietors names; Brock and Michelle. This is a symbol of
their combined passions for excellence and extreme attention to
detail. These characteristics are forthcoming within their vineyard,
winery and each and every bottle they create.
The Waterman's have created a very unique environment for
patrons to sample their wines. Their tasting lounge also doubles as
their barrel aging room. The beautifully decorated lounge is
conveniently located right off of Highway 46 East and Golden Hill
Road close to downtown Paso Robles.
For over a decade, Brochelle was one of Pasos best-kept secret as
they were not open to the public. Now Brock and Michelle offer the
exclusive opportunity for consumers to taste their limited production
wines and learn more about their winemaking philosophy. Their
affinity for Zinfandel will be evident upon tasting their current
releases. Over the past 16 years, many devoted Zinfandel fans have
discovered the ultra-premium Zinfandels consistently produced by
Brock. You will not want to miss the ultimate experience of tasting
the results of their passion for bold, gorgeous wines and their
obsession to create one of the areas most extraordinary Zinfandels.
All of their vintages are produced in limited quantities, so you will
want to make Brochelle a must-visit while in Paso Robles.

The Essence of Paso Robles
The winerys owner, Robert Hall, had many years of
experience in the hospitality sector prior to acquiring the Hall
Ranch in Paso Robles. After planting his vineyards he put all of
his energy and knowledge to work to create a winery and
hospitality center that would welcome guests. The smallest of
details can make a huge difference when it comes to
entertaining. I wanted to create a warm and beautiful place in
Paso Robles that people would visit time and time again.
The tasting experience at Robert Hall may be customized to
fit the guests desires. Up to five wines may be selected from
either the standard tasting or for a slightly higher fee from the
reserve tasting lists. Each month the winery features a Wine of
the Month with special pricing and a recipe card. With so many
wines there is something for every palate on the list and the
knowledgeable tasting room staff is delighted to help make the
tasting experience a memorable one.
For guests who want to linger, there are plenty of things to
do at Robert Hall. Every day the winery offers a guided,
educational tour of the large caverns, winery and hospitality
center. The tour is included with the tasting fee and is a great
way to learn more about how the wines are made. Everything
from the vineyard to the bottle is discussed with a barrel tasting
offered in the caverns. The tour lasts approximately 30 minutes.

Pasolivo Olive Oil is nestled among some of Paso Robles most
exemplary wineries off Highway 46 West. The tasting room is run
by a very knowledge forward and friendly staff that is there to assist
in not only tasting their products, but in educating on the oil-
making process and the numerous health benefits associated with
olive oils. Tasting is always complimentary and includes the ability
to taste a variety of spices and salts with their hand-crafted olive
oils, which are big, bold and exemplify all three positive attributes
of fresh olive oils: fruitiness, bitterness and pungency.
The olive oils are created start to finish on the premises under
organic and sustainable practices that result in very little waste
products. Eleven different varieties of olives, ranging from Spanish
to Tuscan, are grown on the 45-acre orchard. All olives are hand-
picked to prevent bruising and cold-pressed within four hours with
an Italian Pieralisi Major 2 continuous press, which is available to
tour upon request. The whole olive is pressed, including the pit
and skin, and the byproduct after separating off the oil is a paste
that is used as a natural fertilizer in the orchard. The harvest takes
place once a year in November/December and visitors are welcome
to spectate. The oils are then packaged in eco-friendly tins designed
to maximize the protection of the oils.
Your visit to Pasolivo is sure to be enchanting and educational,
and dont forget to peruse the gift shop where you will find bath
and body products made with Pasolivos very own olive oils, as well
as artisan foods and unique household products.

Sustainability is one of the key ingredients at Peachy
Canyon Winery on the west side of Paso Robles, where owners
Doug and Nancy Beckett have been producing wine since
1988.
In addition to sourcing top quality fruit from a number of
growers in the area, the Becketts manage 100 acres of their own
vineyards, which participate in the Sustainability in Practice
(SIP) Vineyard Certification Program. This highly-respected
accreditation requires growers to farm in a way that protects
both natural and human resources. Habitat conservation,
energy efficiency and water conservation are all integral parts of
the program.
At Peachy Canyon, the vineyard team grows cover crops in
between their vine rows to help prevent erosion during the
winter months. They also compost all of the byproducts from
the winery and reintroduce them to their soils every other year.
Throughout the growing season, each vineyard block is
strategically watered to maximize the quality of the fruit while
minimizing water waste and runoff. Rather than spray
pesticides, they introduce beneficial insects to the vineyard,
such as ladybugs, lacewings and praying mantis, which feast
upon enemy pests.
A visit to the Peachy Canyon tasting room on Highway 46
West will treat you to a number of award-winning Zinfandels,
Bordeaux blends, Malbec and Viognier. Grab a glass of the
Chardonnay and settle beneath the idyllic gazebo, or pack a
picnic and sit amongst the undulating vineyards and canopy of
ancient oaks. Peachy Canyon is a place not to be missed!

In the picturesque northern reaches of Paso Robles Wine
Country lies a passionate dream-turned-reality. Eight years
ago, longtime friends and business partners, Ken Warwick
and Nigel Lythgoe, shared a remarkable bottle of Paso Robles
Cabernet Sauvignon and chased it down to discover an
amazing wine community and a landscape that reminded
them of their childhood home in Northern England. It
wasnt long before they got excited about the prospect of
owning their own vineyard and making wine.
In the intervening years, a beautiful villa has sprung up
on the property and the winery has produced a veritable
flood of award-winning wines. The carefully-tended 168-
acre vineyard boasts 11 different varieties. The location of
the vineyard up in the hills of San Miguel is ideal for the
fruit, says Winemaker, Matt Ortman. The soil isnt very
deep so the vines have to work hard to produce the fruit.
The vigor of the vine is controlled naturally by the soils and
the results are exceptional grapes.
With national distribution established in 42 states and
several countries, along with a solid foundation of an
outstanding vineyard, Ken and Nigel have built out their
production facility and opened up their dream to the world.
October of 2012 saw the opening of a beautifully-appointed
tasting room, and 2013 marked the winerys first vintage
produced in-house under Matt Ortmans purview.

Silver Horse Winery is located on the winerys estate
vineyard on the east side of Paso Robles. The vineyard consists
of 40 acres of Cabernet Sauvignon, Grenache, Malbec, Petit
Verdot, Syrah and Tempranillo. These six varieties grow
exceptionally well in the warm, dry climate which is so
common around the Pleasant Valley Wine Trail. Silver Horse
crafts small lot wines from this estate vineyard; at times the
vineyard can produce less than one ton of fruit per acre.
Winemaker Steve Kroener describes his wines as being,
100% food friendly, and with the layered complexity and
balanced acidity of each bottling, there is no doubt about it.
The Albarino is perfect for sipping with artisanal cheese and
charcuterie. The Petite Sirah has become what some might call
a cult wine and Silver Horse offers a prime example of the
Rhone variety. Recently, wine critics have taken note of Steves
winemaking and the unique vineyards of the east side of Paso
Robles. The 2009 Sage, a Bordeaux-style blend of Cabernet
Sauvignon, Malbec, Merlot and Petit Verdot, was awarded a
gold medal from the San Francisco Chronicle Wine

In 2005, the Kroener family built a state-of-the-art winery

Eos is one of the most popular wine tasting destinations in the Central Coast
region of California. Ever since its opening in the mid-1980s, the winery has
built an enthusiastic fan base and earned praise from the media for its bold reds,
complex whites and luscious dessert wines.
The winery takes its name from the Greek goddess of dawn. Myth has it that
Eos opened the gates of heaven each morning allowing the sun to begin its daily
trek across the sky. Fiercely passionate, she was cursed by Aphrodite for having
an affair with Ares. Her punishment was an insatiable appetite for young men.
Since its purchase in 2010 by Bill Foley, Eos has undergone a number of
changes to improve wine quality, upgrade brand image and enhance visitor
experience. Recent and future bottlings feature a new label design that captures
the essence of the brands namesake and the authenticity of the wines.
The wine club has been revamped to provide more options and access to
wines that arent available elsewhere. Some of the exclusive, limited-production
wines that are available to members include proprietary and single-vineyard
bottlings of Zinfandel, Cabernet Sauvignon, Petite Sirah and Chardonnay.
The tasting room, located at the corner of Airport Road and Highway 46
East, is one of the most enjoyable stops for wine lovers in the Paso Robles
region. Laid back and casual, it is the perfect place to sample new releases with
friends and family.
The winery offers both public and private tasting programs, plus a variety of

Eberle Winery is currently celebrating 35 years of fine winemaking in
Paso Robles and 30 years of Cabernet. The winery has plenty to
celebrate, including being named Eberle Winery of the Year at the
2013 Central Coast Wine Competition. The event, held at the Paso
Robles Event Center, represented 139 local wineries and 554 wines that
were reviewed.
Visit the winery and discover why Eberle Winery is one of the most
popular stops during a wine tasting adventure in Paso Robles. In
addition to the spacious tasting room with a large gift shop, the facility
also includes underground caves, an expansive vineyard deck, bocce ball
courts, the Wild Boar event room with commercial kitchen and plenty
of places to have a picnic lunch while enjoying the vineyard views.
Inside the tasting room guests have the opportunity to taste the
Eberle wines that continue to be top award winners. Made from grapes
grown on the 60-acre estate vineyard, Gary Eberle and winemaker Ben
Mayo handcraft each of the wines for the 27,000-case production. On
the tasting list you will find Chardonnay, Viognier, Muscat Canelli,
Cabernet Sauvignon, Syrah, Zinfandel, Sangiovese and Barbera. There
are also a few delicious blends including Cotes-du-Robles Blanc, Full
Boar Red and Cotes-du-Robles. Eberle Winery remains one of the few
tasting rooms where guests are offered complimentary tasting every day
of the week.
Although Eberle has grown in production over the years, the winery
still has a warmth and family feel. On most visits to the tasting room you
will find the Eberle standard poodles, Zinfandel and Roussanne,
wandering the tasting room for a little well-deserved attention. Eberle
welcomes families and four-legged friends for an enjoyable experience.

Its no wonder the people here call it SLO. No
one is in any hurry in the cafs or on the side-
walks, and certainly no one is in any rush to
leave. The vibe is relaxed but not sleepy in the
two-college town of 44,000, which has four surf
shops but also a resident symphony. Strangers
are genuinely friendly, always ready to talk about
their favorite hiking trail or barbecue joint, or to
point the way to the winery with the best Pinot
Noir. Its all part of the SLO life, that combination
of good stuff that makes visiting here so nourish-
ing to the soul. Theres plenty to go around, so
come: Experience the SLO Life!
San Luis Obispos unusual natural beauty,
along with its gentle climate, first attracted the
Spanish padres to the area in the 1700s. In 1772
they built the fifth of Californias 21 missions
here, on the banks of San Luis Creek, and named
it Mission San Luis Obispo de Tolosa. Today, many
consider this the most beautiful of the Spanish
missions.
SLOs once-dusty streets are now tree-lined
and flanked by meticulously restored Victorian
painted ladies. Old West buildings have been
converted to bustling shops and restaurants, and
Art Deco civic architecture stands downtown. A
university and a college have brought cultural
excitement in the form of numerous musical and
performing arts groups; major touring shows
regularly stop in SLO. A childrens museum, an art
center and a history museum add to SLOs cul-
tural appeal, as do its many art galleries. At the
Thursday Night Farmers Market, held year-
round, growers bring the freshest produce and
flowers to town and a multi-block party ensues,
complete with street food, crafts vendors and live
entertainment. Festivals and special events of all
kinds take place on the plaza in front of the Mis-
sion year-round. Forty-five minute north, the
art-and-architecture extravaganza known as
Hearst Castle awaits.
South of town, a booming wine country has
emerged. Some two dozen wineries produce crit-
ically acclaimed vintages in the Edna Valley and
Arroyo Grande Valley. Visitors can head out along
the gorgeous country roads to sip their way
through the vineyards, then return to town to
savor everything from Santa Maria barbeque to
Italian fritti.

The historic Chamisal property, the first vineyard planted
in the Edna Valley, has been producing wines of distinctive
character bold, complex and intriguing since 1973. With
the proximity to the ocean and cool climate, it is the ideal
area for Pinot Noir and Chardonnay. The winemaking
philosophy reflects simplicity and purity allowing the natural
characteristics of this remarkable estate to shine through.
The vineyard is home to five different varieties planted on
85 acres: Pinot Noir, Chardonnay, Syrah, Grenache and Pinot
Gris. To add complexity to the finished wines, each variety
was planted with multiple clones which were carefully
chosen for the vineyards specific climate and soil type. The
result offers winemaker Fintan du Fresne, 24 completely
different parcels to blend into his bold, delicious and
perfectly balanced wines. The Pinot Noir, for example, has 10
various clones which Fintan uses to layer flavor into all five of
his Estate grown Pinot Noirs.
The Chamisal tasting room is in an updated, modern barn
that opens up onto the beautiful back patio set in the Estate
Vineyard. The nice quiet garden patio overlooks the La Panza
mountain range. Director of Consumer Sales, Andrea de Palo
sets the tone by bringing a warm and inviting feel, making
guests feel like family. Andrea does a professional job of
helping all visitors understand and appreciate the nuance of
the various Chamisal wines. She and her staff are happy to
cater to visitors of all types. With a wide range of varieties
and styles, its not hard to find a Chamisal wine to fall in love
with. The tasting room prides itself on welcoming repeat
visitors back again and again.

Talley Vineyards may be celebrating 28 years in business,
but they are still younger than Talley Farms, started in the
1940s. Though the farm is an integral part of the family-run
business, producing specialty and organic vegetables, its the
wine that has taken centerstage.
Today, Talley has six estate vineyards in the Arroyo
Grande and Edna Valleys. Their Mediterranean-styled tasting
room rests in the middle of their historic Rincon Vineyard in
Arroyo Grande, where cropland surrounds the vines. The
comfortable tasting room has floor to ceiling windows, a
horseshoe tasting bar and vaulted ceilings. The expansive
property also features three diverse picnic areas offering
beautiful views of the serene landscape.
Talley has always strived for a personal approach to the
wine tasting experience, therefore they offer a variety of
special tours and tastings. These tours are fun and
informative and can be customized to the size and interests of
any group. Guests are educated about what happens in all
aspects of the winemaking process and can focus on the
winery, vineyards and barrel room. For example, during May
visitors can learn about shoot thinning and spring pruning or
have a Chardonnay Experience and learn about Chardonnay
while tasting a flight of vineyard designated wines. In
September, learn about harvest techniques and fermentation
or taste through new releases of their Pinot Noirs.
Talley is open daily for tasting of their Talley Vineyards
and Bishops Peak wines. Visit Talley Vineyards today and

three decades in the Arroyo Grande Valley.

Vivant Fine Cheese shop has long been the premier cheese shop
and wholesale cheese expert to over 150 wineries, restaurants and
finer stores, they now have more than 250 different cheeses to choose
from at the new location. They offer in-house wine and cheese
pairings with fantastic varietals from DeAngelis, Tolosa and more. The
new space will have an expanded lunch menu for locals including
soups, salads, grab-and-go work week lunches.
Due to our popularity we had to move to a bigger place to serve
our customers better, stated Danika Gordon, owner of Vivant Fine
Cheese. We are still right in the heart of historic downtown Paso
Robles and easily accessible for those wishing to take our exceptional
cheeses along with their wine tasting. Vivant offers cheese boards,
charcuterie platters, picnic baskets and boxed lunch sandwiches to
enjoy at the location or to go.
Vivant Fine Cheese tasting room is making a new home at 821
Pine Street, Suite B in Paso Robles, California with the an updated
cheese tasting room featuring premium local and imported
handcrafted artisan cheeses paired with the finest Central Coast wine
and beer.
The new location will bring the new Exclusive Cheese Club that
delivers quarterly gourmet seasonal cheeses to the members. All
shipments include tasting notes, wine pairing suggestions and
delicious recipes. The website offers many cheeses and catering
options for you to purchase at www.vivantfinecheese.com and they
offer full catering services and by-appointment pairings for wineries,
weddings and special events.

Santa Ynez is home to several of the most renowned Santa Barbara County wineries. Its ideal viticultural microclimate, with warm days and cooler nights,
produces an extensive variety of wines. These bottlings include representation from wine origins around the world such as the Rhne Valley, Bordeaux and
central Italy. Nestled in the heart of the Santa Ynez Valley is the tiny town of Los Olivos. There are more than 20 tasting rooms within walking distance on
and around Grand Avenue, each unique and delicious. In between these tasting rooms are world-class restaurants and artisan gift shops. The climate is
moderate year round and there is not an off season in this area. However, in autumn, the Santa Ynez Valley offers near perfect weather and breathtaking
views of multi-colored vineyards.

Whats in a name?Well, Cimarones is quite
simple: its the frst two letters of their sons

and raised in Kenya.
Roger is from Yorkshire, England with a

Bring in this article for a two-for-one tasting.
Diversity is truly the spice of life and, with nearly three dozen tasting
rooms in Los Olivos, how does a winery stand out? For Cimarone thats
easy. You see, Cimarones tasting room is the first tasting room
representing the newly formed Happy Canyon of Santa Barbara AVA in all
of Los Olivos.
But what exactly does that mean? Well, it means that Happy Canyon
is becoming known for Bordeaux grapes like Cabernet Sauvignon, Merlot
and Sauvignon Blanc, and this federally recognized growing area is
unique in all of Santa Barbara since these grapes are less common here.
After walking countless properties, we were finally introduced to what
would become our Three Creek Vineyard, says owner Roger Higgins.
This site possessed all of the elements of an ideal vineyard locale: rocky,
well-drained soils, steep hillsides and south-facing slopes, all within the
Happy Canyon of Santa Barbara AVA. Here we could plant and grow a
superb vineyard utilizing low-yields and sustainable vineyard care.
Their goal is to always produce handcrafted, high-quality wines under
two distinct labels Cimarone and 3CV, whose wines hover in the $20
range, both with an emphasis on Bordeaux and Rhne varietals. Of
course to make great wine you need a great winemaker and the Higgins
tapped winemaker Andrew Murray who, as Roger says, embodies our
goal of making thoughtfully constructed serious wines. Currently they
are making about 3,000 cases and its not uncommon to find Roger and
his wife Priscilla behind the counter in their tasting room pouring wine
and chatting about their project. They are truly hands-on in every aspect
of the winery and that translates to unique wines from a unique region
making for a unique wine tasting experience. By Michael Cervin

Over the last 30 years, Qup owner Bob Lindquist has
achieved a sort of legendary status in the wine world.
Lindquist has been involved in the Santa Barbara County wine
industry since its beginnings as a modern wine region in the
mid 1970s and was an early advocate of growing Rhne grapes
in the region, focusing specifically on Syrah. In 1982,
Lindquist started Qup winery and today, he continues to help
increase recognition of the region world-wide through produc-
tion of his Rhne-style wines.
The name Qup comes from the local Chumash Indian
word for poppy, as it seemed only fitting to pay homage to the
original cultivators of the land. Lindquist wanted to convey his
dedication to growing and producing local wines, and so chose
the iconic California poppy to represent his brand. Each Qup
label is graced by yet another poppy. One of which was origi-
nally a quilt design by the craftsman-era artist Gustav Stickley.
The focus of the Qup wines has always been on producing
wines that exhibit the unique flavors of both the terroir and the
grape varieties, which is why he chose to source from the
world-renowned Bien Nacido Vineyard. In 2002, Lindquist
and his wife Louisa purchased an 80-acre property in Edna
Valley near San Luis Obispo, and are growing both French and
Spanish-style grapes Biodynamically.
A visit to the Qup tasting room in Los Olivos will quickly
reveal that winemaking runs in the Lindquist family. Visitors
will often taste the Verdad and Ethan wines, made by Bobs
wife and son, respectively. Youre sure to feel like one of the
family, too, before you leave! By Carolyn Turner

Bring this story in for a 2-for-1 tasting.
Andrew Murray Vineyards has been crafting Rhne inspired
wines in the Santa Ynez Valley for over 20 years. It was a fateful
family trip through the Rhne Valley in the late 1980s that led
Andrew to leave his UC Berkeley studies behind, to pursue his new
mistress, Syrah, with an internship in Australia. His three-month
tryst evolved into a 15-month romance with the famed Australian
Shiraz. Returning to the states, he earned a bachelors degree in
viticulture and enology from UC Davis renowned wine program,
then founded his eponymous Santa Ynez winery and vineyard.
Andrews focus and dedication to his craft have culminated in
what Robert Parker, Jr. calls, one of the shining stars in the Santa
Barbara firmament. This youthful perfectionist has been named
Tastemaker of the Year by Food and Wine Magazine, as well as,
One of the most fearsome talents in food and wine. Still, despite
myriad accolades, Andrew remains the same modest, approachable,
contemplative man he was when he first embarked to Australia back
in 1992.
In January of 2014, Andrew was offered the chance to take over
the former Curtis Winery location, along with the management of
their 50 acres of estate Grown Rhone varieties. Andrew and his team
look forward to visiting with you at the newly updated hospitality
and event center, and pouring you a glass of wine to enjoy on their
recently completed Wine Club Terrace. They also now offer a full
Wine Country Concierge service to help plan your visit. They can
arrange anything from a reserved table at the winery to a fully
stocked picnic basket and a chilled bottle of their Viognier. They are
conveniently located just a few miles from downtown Los Olivos,
where they have a second tasting room to serve you if you simply do
not have the time to venture out Foxen Canyon Road. They look
forward to your visit.

When businessman and financier Bill Foley moved his
family to Santa Barbara in 1994, he saw the realization of his
life-long dream: to become a vintner of premier Burgundian-
style wines. Foley founded Lincourt in 1996 and named it for
his two daughters, Lindsay and Courtney.
Under the watchful eye of renowned winemaker Leslie
Mead Renaud, the 50-acres of estate Sauvignon Blanc,
Cabernet Sauvignon and Merlot are farmed vine by vine,
with Renaud taking the best blocks (or rows) of grapes to
create each wine. Renaud also uses some of the best Pinot
Noir and Chardonnay grapes from Foley Vineyards to create
wines that are both approachable and affordable. Both
Lincourt and Foley Vineyards practice sustainable farming
techniques in order to ensure the highest quality of wine from
grape to glass.
Drawing from years of experience working for wineries
throughout California, Renaud shares Foleys commitment to
quality winemaking. Each wine is aged in French Oak barrels
with the focus on creating wines that exemplify the unique
terroir and varietal-rich flavors.
As you arrive at Lincourt, the iconic windmill that graces
each of their wine labels will greet you as you enter the old
farmhouse. The relaxing atmosphere and beautiful property
offers something for the whole family wine tasting,

Santa Rita Hills, on Californias Central Coast, arguably produces the highest quality Pinot Noir from California. This relatively new appellation consists of
only 100 acres and is located between the Pacific Ocean and the historic Danish town of Solvang. The two coastal east-west oriented valleys between the
Sta. Rita Hills offer maritime climate and unique soils, which produces exceptionally concentrated flavors in the grapes from this region. Pinot Noir of the

Over the past fifteen years, Bill Foley has worked hard to
make his name synonymous with unique and quality wines from
Santa Barbara County. After the successful creation of Lincourt
Winery in 1996, Foley went on to found Foley Wines in 2002,
adding both Rancho Las Hermanas and Rancho Santa Rosa
vineyards to his growing portfolio of high quality vineyards.
Located in the heart of the famed Santa Rita Hills AVA, the
temperate coastal climate, south-facing hills and limestone soils
amount to the holy grail of elements for producing world-class
Pinot Noirs and Chardonnays. Foley knew he needed a wine-
maker who could exemplify this fruit and create wines in their
likeness, and so Leslie Mead Renaud joined the team. As Chair-
person for World of Pinot, Renaud is completely in her element
as she farms both vineyards cluster by cluster, picking the best
bunches of fruit to create each Foley wine.
Foley focuses on creating wines that embody the uniqueness
of the Santa Rita Hills, and hes also taken great care in creating a
tasting room and event center that allows guests to enjoy being
surrounded by the spectacular mountain ranges, coastal oaks
and contoured hillside vines.
In less than twenty years, Foley has watched his love of
wine become a dream that hes been able to share with visitors
from around the world. Wine Enthusiast magazines Man of
the Year in 2010 is an honor that only further fuels Foleys
commitment to creating quality wines worth sharing.

Foxen Canyon to Santa Barbara
The hit motion picture, Sideways, put the Santa Maria Valley viticultural appellation, including the Foxen Canyon Wine Trail, on the map in 2004. Following
the picturesque winding roads of Tepesquet and Foxen Canyon will lead you to world-class wineries by way of sprawling vineyards and rolling hills. In the
more northern region of the appellation, Chardonnay and Pinot Noir reign due to the maritime climate. This ensures a long temperate growing season
which the Burgundian varietals crave. In the southern region of the appellation, the trail moves a bit east resulting in hotter days and cooler nights. Bor-
deaux and Rhne varieties flourish in this more extreme climate. The wineries in this region boast a concentration of Californias most well known winemak-
ers; join them year round in the tasting rooms or at the many weekend events.

Since 1973 Zaca Mesa Winery has been dedicated to
producing wines that truly capture the unique spirit of
their land. Their very name comes from the Chumash
word, Zaca, meaning restful and peaceful place a
sentiment that permeates every aspect of the 750-acre
estate.
Located in the northern-most region of the Santa Ynez
Valley AVA, Zaca Mesa Winery planted close to one third of
their land to Rhne varieties along the mesas scattered
throughout the property. This combination of prolonged sun
exposure, rich and well-drained soils and mostly organic
farming practices leads to the creation of 100% estate-grown
and bottled wines that are unparalleled. As their website
states: We have embraced the code [of Sustainable
Winegrowing] in our winegrowing to ensure the health and
sustainability of our vineyards, our employees, our neighbors
and our environment.
Visitors have the opportunity to taste these distinctive
wines in a rustic yet chic tasting room that was built in the
1970s, located in the original winery.
For visitors interested in tasting these wines amidst the
peaceful spirit of the land, Zaca Mesa Winery offers
additional picnic areas near the tasting room, as well as on a
hill overlooking the vineyards. From time to time
winemaker, Eric Mohseni, offers hikes through the
vineyards, and on the weekends visitors are often treated to
food trucks. For a complete list of upcoming events, be sure
to check the events section of the website.

Firestone is considered by many to be the Grande Dame of the
Santa Ynez Valley. Founded in 1972, it was the first major estate winery
established in this pastoral Central Coast AVA. Over the past 40 years it
has evolved into one of the regions most popular and successful
producers thanks to a portfolio of wines that offer serious quality at
reasonable prices.
The Firestone estate is situated near the charming little town of Los
Olivos, two hours north of Los Angeles and five hours south of San
Francisco. Los Olivos is known for its old west feel, fine restaurants
and homey lodgings. The local vibe is placid, casual and peaceful. The
surrounding countryside is typical of rural California with rolling hills
that morph seasonally from summer gold to winter green.
The estate is in a unique cusp region of the valley that offers
moderate temperatures and an extremely long growing season enabling
Firestone to successfully grow a staggering range of grape varieties.
Red wines have their origins in Bordeaux and the Rhne Valley. They
include: Cabernet Sauvignon, Merlot, Malbec, Cabernet Franc and
Syrah. White wines feature grapes from Burgundy, the Loire Valley and
Germany and include: Chardonnay, Sauvignon Blanc, Riesling and
Gewrztraminer.
Firestone boasts one of the most popular tasting rooms in Santa
Barbara County. The lovely visitors center has an expansive island bar
backed by large picture windows that look out on the vines. For
private events, Firestone has a handful of indoor and outdoor areas
suitable for weddings, receptions, corporate gatherings, birthdays or
anniversaries.

Bring in this article for a two-for-one tasting.
Bigger is not always better in the wine industry. A case in point is
Fontes & Phillips who make less than 1,500 cases of wine, amounting
to about 300 to 400 cases each of Chardonnay, Pinot Noir, Sauvignon
Blanc and ros. Owner and winemaker Alan Phillips works together
with his wife, Rochelle Fontes-Phillips, to create a portfolio of small-
lot wines from world-class Santa Barbara County vineyards including a
single vineyard designate Pinot Noir from the Santa Rita Hills.
But prior to calling Santa Barbara home, Alan, who worked at
wineries in the Napa Valley, eventually moved into winemaking
consulting which led him to New Zealand, Germany, France, Spain
and Portugal, giving him the opportunity to make wine and view the
wine business from a global perspective. Together Rochelle and Alan
have been involved in the wine industry for 35 cumulative years and
in 1998, they moved to Santa Ynez to help Bill Foley launch Foley
Estates and Lincourt Vineyards.
While establishing Foley, Alan was working quietly on his own
label, preferring smaller scale production where he could focus his
energies on his wines. His personal favorite is actually Panky, a classic
ros made from equal parts of Grenache, Cinsault and Syrah from
Santa Ynez. And, lucky for us, Panky is a terrific wine and it actually
opens the door for wine lovers to better understand ros. This dusty
rose-colored wine is whole cluster pressed which helps to preserve the
natural vibrancy of the grapes. It is then stainless steel fermented
without a secondary malolactic fermentation and then bottled in
December following the harvest. Small lots, big flavors which shows
that, at Fontes & Phillips, smaller is better. By Michael Cervin

Founded in 1962, Santa Barbara Winery is Santa Barbara's
first commercial winery since the prohibition era. In fact, Santa
Barbara Winery opened its doors ten years before any other
winery in Santa Barbara County. Today, our winery and tasting
room are at the heart of Santa Barbaras Urban Wine Trail, just
blocks from the beautiful Pacific Ocean.
While we are best know for our Santa Barbara County
Chardonnay, which can be found nationwide and abroad, we
specialize in a multitude of varietal wines made from French and
Italian grapes of both fame and obscurity.
Santa Barbara is home to four separate American Viticultural
Areas (AVAs), each with its own distinct climates and soil types,
which allow local growers to grow a variety of different grapes
throughout the county.
We offer award-winning wines made from such familiar
grapes as Pinot Noir, Cabernet Sauvignon and Sauvignon Blanc,
as well as less commonly encountered botrytized dessert wines,
the very rare deep, dark Lagrein, and more. All of the grapes we
use are sourced from our vineyards and neighboring vineyards in
Santa Barbara County.
Our tasting room is located in the winery itself. You can enjoy
a flight of the current vintage while watching the next vintage
being made. We also offer wines by the glass and private,
candlelit VIP tastings* in our barrel-aging room, accompanied by
a gourmet cheese platter and the undivided attention of your own
personal sommelier.

When conjuring up a vision of Malibu, an image of starlets dodging
paparazzi and suntanned surfers is certain to come to mind. But for the
wine lover, there is a much more fascinating attraction to this stunning
section of the California coastline.
The first documented vineyard in the area was planted on the Rancho
Topanga Malibu Sequit by Jose Bartolome Tapia, who left it to his wife,
Maria, in 1824. Matthew Keller, who purchased the land in 1857, planted
hundreds of acres of grape vines in Solstice Canyon and named it the Rising
Sun Vineyard and the first modern day vineyard, The Malibu Vineyard, was
planted in 1985 by Michael and Kim McCarty. Since then, intrepid vintners
have begun to take advantage of the marvelous growing conditions that the
area offers and are now producing world class wines. From the luscious
Pinot Noir and Chardonnay vineyards overlooking the Pacific Ocean, to the
bold and elegant Cabernets and Merlots of the canyons, the Malibu Coast is
truly oenophiles paradise.
The Malibu Coast wine region is bordered on the south by the Pacific
Ocean and on the north by the Conejo Valley. The rich volcanic soil, coupled
with cooling Pacific fog and the temperate Southern California climate, is
producing award-winning wines and wooing visitors from around the
world.
Tastings rooms on the Malibu Coast offer a wide variety of experiences
from picnics overlooking stunning ocean vistas, to rockin summer concerts
and private tours. But perhaps the most enticing element to a day in the
Malibu Coast wine region is the opportunity to meet the vintners and
winemakers themselves. Most wineries in the area are family-run
operations and they take great pride in their vineyards, relishing the
opportunity to introduce you to their wines.
So put the top down on the convertible and cruise up the Pacific
Coast Highway to the Malibu Coast Wineries for a day filled with
marvelous wines and the shimmering blue of the Pacific Ocean. It is a
combination that will surely provide a lifelong memory of the best that
Southern California has to offer.

Carol and Stephen Hoyt have had a long-standing love for wine.
Early in their marriage they visited a working vineyard in Napa and
developed a desire to be vintners. A photograph taken of grapes in
their kitchen reminded them daily of their dream to have a vineyard
of their own. They thought it would be Napa, but the dream was
realized when in 2001, they found a stunning piece of property in
Malibu with a close proximity to the Pacific Ocean, they knew they
could plant there. With its cool mornings, hot days and followed by
cool nights it became a perfect environment for growing the award-
winning Chardonnay you find today. They had been sourcing grapes
from Paso Robles and Santa Ynez for their other wines. So it was
natural that when the opportunity to purchase additional property in
the heart of the west side of Paso Robles became available, they
jumped at it. There they now have 141 acres, 30 acres planted with
such varieties as Tempranillo, Cabernet, Viogner, Grenache, Syrah,
Zinfandel, Muscat and Petit Verdot.
Carol started her winemaking experience in her kitchen with 100
pounds of Cabernet which yielded two cases of a delightful wine they
called Carols Cab. Today, they utilize the custom crush facility of
Terravant Wine Company in Buellton. Carol and Stephen plan to
build a small, boutique winery and tasting room on their Paso Robles
property. They currently produce 1200 cases annually and hope to
triple that. But now they enjoy being exclusively small and were even
selected Microwinery of the Year 2012 by the California State Fair,
and their 09 Cabernet received 98 points and a double gold. You
will find gold medals hanging from most of their wines.
Hoyt Family Vineyards does not have a tasting room on their
property in Malibu, but you can enjoy their wines at Cornell Winery
in Agoura, in addition look for their gold medal Chard in most
restaurants in Malibu.
They do offer tastings by appointment only in Paso Robles.

In many cases, the best wines are produced from the grapes grown
in small, intimate vineyards. The Mailbu Vineyard Pinot Noir, is just
such a wine. Made from fruit grown on a two-acre vineyard in the hills
of Malibu, this wine is available at a variety of restaurants and stores in
the Malibu and surrounding area.
The Malibu Vineyard, which is owned by restaurateur Michael
McCarty, once produced a variety of wines, including Cabernet
Sauvignon, Merlot, a Cabernet Franc blend, Pinot Noir and
Chardonnay, but after the Malibu fires of 1993, this all changed.
McCartys house was destroyed by fire, and part of the vineyard was
scorched. Eventually, McCarty decided to replant his entire vineyard,
and focus on producing Pinot Noir. He said the microclimate was
perfect for the production of this type of wine. The current Malibu
Vineyard series was born.
The Malibu Vineyard Pinot Noir is described as fruit-forward, with
strong nuances of berries and black cherry, and hints of leather, tobacco
and sandalwood. The wine goes great with lamb, steak, duck and
turkey.
Both of Michael McCartys restaurants, Michaels Santa Monica and
Michaels New York, carry the most recent Malibu Vineyard release.
The Malibu Vineyard wines can also be purchased at other locations,
including several restaurants in Malibu, such as Nobu, and in local
stores.
The best way to sample the wine is to order a glass at Michaels
Santa Monica, located at 1147, 3rd Street, Santa Monica, CA 90403, or
call Michaels Santa Monica at (310) 451-0843.

The Santa Monica Mountains stretch from the
Hollywood Hills to Point Mugu encompassing 500
miles of picturesque trails offering numerous
recreational and scholastic opportunities. Among these
mountains, between Malibu and Agoura Hills, is the
community of Cornell, home to the Peter Strauss
Ranch, the famous Rock Store and the delectable Old
Place, all residing in close proximity to Malibou Lake.
The area has had an extensive history connected to Los
Angeles elite since the late 1800s and today, Tim
Skogstrom is proud to call Cornell home to the Cornell
Winery & Tasting Room, where you will find one of the
most exclusive wine selections in Southern California.
Tim Skogstrom owns and operates the Cornell
Winery with the goal of bringing the best of wine
culture home. Tim had been managing prestigious
wineries for over twenty years when he came to Cornell
looking to recreationally make wine and soon decided
to provide an outlet for people to not only drink the
local wines of the Santa Monica Mountain area, but to
offer an unparalleled experience rich in the surrounding
history and culture. Now, Tim sees Cornell as the
trailhead to the Central Coast and offers an exclusive
education on the various microclimates and unique
practices of the growers and winemakers from Malibu
to Paso Robles. By Bethany Rhine

Its a good idea to plan to visit several wineries as every
wine-tasting experience offered is different. With so many
distinctive viticultural areas, one can easily taste many
of the worlds best varietials and winemaking styles
without learning the region. Listed below are five basic
types of tasting experiences. The experience will vary in
style from winery to winery.
Wine Bar Tasting
The most common tasting experience is a Wine Bar
Tasting. You step up to the bar where typically a list of
wines being poured is displayed. Expect to pay a tasting
fee between $10-$40. Some tasting bars will offer you the
option to taste a library or reserve wine. Exercising this
option increases the fee, but will allow you to taste very
unique, old or rare wines.
Sit Down Tasting
A Sit Down Tasting usually requires an appointment
and there may be a slightly higher fee than a wine bar fee.
Seated in an elegant room, you are poured several wines
by your winery host. Expect your host to describe the
unique characteristics of each wine and how it was made.
Table Service Tasting
A Table Service Tasting, popular at sparkling wine
facilities, is a tasting experience where you are seated at a
table and the tastings are brought to you.
Walk Around Tasting
A Walk Around Tasting is a combination of a tour and
a tasting. Your host brings along several bottles of wine
on your tour, and may take you to a garden area of the
winery to pour the first round. Then you move to another
place within the winery to sample the next wine. This
experience continues until all the wines are tasted.
Barrel Tasting
Another popular tasting experience that can be part
of a tour or a Walk Around is a Barrel Tasting. Your guide
takes a wine thief, a special siphon placed into a hole
in the top of a barrel to extract tasting samples of a
maturing wine. The sample allows you to taste what the
wine is like in the middle of developing its full potential.
Why make an appointment?
Some wineries are so small that they need to know
when you are coming so someone will be there to greet
you. Other wineries have permit restrictions that limit the
number of guests that can visit each day. Others have sit-
down tastings that start and end at specific times. Its
always a good idea to schedule your appointments well
in advance of your visit because some of the more popular
wineries fill up their appointments weeks in advance.
