Croque Madame

Adapted from a Prevention Magazine Recipe

1 tsp EVOO ½ small onion, sliced thin 1-2 large leaves of kale, washed, stems removed and chopped Pinch cayenne Pinch nutmeg 2 slices Rosemary Sourdough bread 1-2 Tablespoons Daiya shreds, any flavor 1-2 pieces of thinly sliced deli ham 1 large egg Sauté onion in olive oil until caramelized (7-8 min). Add kale and 2 Tablespoons of water. Season with salt, pepper, cayenne and nutmeg (if you are using whole wheat sourdough add a pinch of rosemary). Cook, stirring occasionally until kale is tender and water has cooked out (78 min). Remove from heat. Sprinkle half the cheese on one slice of bread, top with ham, and onion/kale mixture. Top with remaining cheese and other slice of bread. Spray sauté pan with Pam or brush bread with more olive oil, grill sandwich on both sides, I like to press mine down with a cast iron skillet. A grill pan or Panini press would be great. Set sandwich aside and add more olive oil or Pam to pan. Fry egg to preferred doneness. Just know that a runny yolk makes this sandwich extra yummy. Top sandwich with egg and serve with a knife and fork.
