Chicken Fried Steak and Gravy

4 cube steaks
Salt and pepper
2 eggs, beaten
1 cup flour
Canola oil
2 Tbsp bacon grease
2 Tbsp flour
1 cup unsweetened coconut milk beverage

1. Salt and pepper both sides of steak. Dredge in flour, dip in eggs and coat
in flour again. Set aside.
2. Heat 1 inch of oil in a skillet, melt bacon grease in oil. Test oil with a little
sprinkle of flour, if the flour sizzles the fat is hot enough.
3. Cook steaks 4 minutes on each side or until cooked through.
4. Keep steaks warm in oven while you make the gravy.
5. Pour off all but about 2 tablespoons of grease. Whisk in 2 tablespoon of
flour. Cook for 1 minute.
6. Whisk coconut milk into roux and cook until thickened, season with salt
and pepper. Serve gravy over steaks and mashed potatoes.
