Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------2 3/4 c Unbleached white flour 1 c Sugar 1/2 ts Baking soda 1/4 ts Salt 1 c Butter or margarine, cut into small pieces 2 Eggs lightly beaten 2 ts Pure almond extract 20-30 whole almonds Mix the dry ingredients in a bowl. Cut in the butter, using a pastry cutter, two knives, or your fingers. The final result should be crumbly, with no pieces of butter larger than baby peas. Stir in the eggs and the almond extract. Preheat the oven to 325F. Roll pieces of dough between your lightly floured palms to form 1" balls. Place them 1 1/2" apart on an unoiled baking sheet. Press an almond into the center of each cookie, lightly flattening the top. Bake for 15 - 20 min, until the bottoms just begin to brown.
