Gii thiu sn phm


Mt hng ny ch yu xut sang th trng Hoa K.
Vic ch bin bt u t lt u, lt v v rt ch bng ln ct gia lng n

t 5, ct gn phn tht hm theo yu cu ca tng khch hng hay quy trnh c th.
Sau tm c x l ho cht (STPP, mui v.v..). Sau khi vi ra, tm c cho vo
ng IQF. Sau tm c ng vo bc. Trng lng ng mi bc rt khc nhau
tu khch hng, quy trnh. Sau y l mt s quy cch thng thy v cc c ph bin.

Cc nh dinh dng hc phn tch c l c 100 g tm ti (ch tnh phn

n c) s cho 82 calori; 79.2 g nc, 17.9 g m, 0.9 g bo, 0.9 g ng chung, 1.4
g x tro, 79 mg calci, 184 mg photpho, 1.6 mg st, 20 mg vitamin A, 0.04 mg vitamin
B1, 0.08 vitamin B2, 2.3 vitamin PP. V th sn phm tm PTO nhm gp phn cung

2.2.3. Bo qun v vn chuyn
Ngay sau khi nh bt, tm c bo qun lnh bng nc (t l 1 / 1
tm), trong thng tn hoc tng nha cch nhit. Trng hp bo qun tm trong cn
x (l, st) phi c lp cch nhit quanh cn x bng l trm, l da nc T l bo
qun 2 /1 tm.

Nhit bo qun tm nguyn liu trong khong 0 0C - 50C. Thi gian bo qun
cng ngn cng tt, nhng khng qu 72h.

Trong qu trnh phn tch, ch s dng thuc th tinh khit phn tch v nc ct

1. Axit pecloric (HClO4)
2. Nc brom, dung dch na bo ha
Ha tan 75 ml brom bo ha nc vi 75 ml nc.
3. Dung dch kali iodua (KI), nng 15%.
Bo qun dung dch ni ti. Loi b khi dung dch chuyn sang mu vng.
4. Dung dch thic clorua (SnCl2)
Ha tan 40 g SnCl2.2H2O khng c asen trong HCl v pha long ti 100 ml
bng nc.
5. Dung dch axit clohydric long (HCl)
Pha long 144 ml HCl ti 200 ml bng nc.
6. Dung dch bc dietyldithiocacbamat
Ha tan 0,5000 g mui bc dietyl dithiocacbamat trong pyridin khng mu ng
trong bnh nh mc 100 ml, pha long n vch bng pyridin. Lc trn v bo qun
trong chai mu nu. Thuc th c th n nh vi thng nhit phng.
7. Amoni oxalat, dung dch bo ha.

Qu trnh phn hy mu cho ti khi hn hp bn mu nu hoc sm.

Chuyn t 2 ml n 5 ml dch thy phn mu thu c v mt lng th tch


mu trng tng t vo cc bnh phn ng. Thm nc n 35 ml, sau va khuy
va thm vo 5 ml dd HCl, 2 ml ddKI v 8 git dd thic clorua, yn t nht 15 pht.
Tch AsH3, b sung 4 ml dung dch bc dietyldithiocacbamat vo ng ch U.
Tho ng ni ch U v trn cc dung dch thu nhn c t ng ch U bng
cch a nh nhng qua li 5 ln vi b ht kh. Chuyn dung dch trc tip vo cuvet
do quang ph (nn y bng np thy tinh) ca my o quang ph v c bc sng
522 nm.
Hm lng As2O3 (hoc As) trong phn mu xc nh c t ng chun.
- Dng ng chun
Chuyn 0,0 ml, 1,0 ml, 3,0 ml, 6,0 ml, 10,0 ml v 15,0 ml dung dch chun cha
1,00 As2O3/ml vo cc bnh phn ng. Thm nc n 35 ml v tin hnh. c bc
sng 522 nm v dng th hp th A theo As2O3 (hoc As).
2.4.1.2. Ch (Pb) v Cadimi (Cd) _ TCVN 7929 : 2008

3.Dung dch gc
3.1. Dung dch gc ch, c nng ch 1000 mg/l.
Ha tan 1,598 g ch nitrat [Pb (NO3)2] trong axit nitric 1%v thm axit nitric
1% n 1000 ml.
3.2. Dung dch gc cadimi, c nng cadimi 1000 mg/l.
Ha tan 1,000 g kim loi cadimi trong mt lng ti thiu axit clohydric 1 %
(10 ml theo 4.2 c pha long bng nc n 1000 ml) v thm axit clohydric 1 %
(phn th tch) n 1000 ml.
4. Dung dch hiu chun
Pha long cc dung dch gc n cc nng cn cho hiu chun. Chn cc
nng sao cho khng vt qu di tuyn tnh hiu chun. Nn s dng ti thiu 3

dung dch hiu chun c cc nng khc nhau. Nng axit trong cc dung dch hiu
chun phi bng nng ca dung dch th.
5. Dung dch trng
Dung dch trng ch cha nc v mt lng axit c nng ging vi nng
axit ca dung dch th.
6. Cht b chnh nn
6.1. Dung dch magie nitrat
Ha tan 0,25 g magie nitrat ngm su phn t nc [Mg(NO3)2.6H2O] trong
100 ml nc.
6.2. Dung dch paladi/magie nitrat
Ha tan 0,075 g paladi trong 2 ml axit nitric nng, pha long bng nc n 25
ml, thm 0,05 g Mg(NO3)2.6H2O v thm nc n 50 ml.
6.3. Dung dch amoni phosphat/magie nitrat
Ha tan 0,5 g amoni dihydrophosphat (H2NH4PO4) trong nc, thm 0,05 g
Mg(NO3)2.6H2O, 1 ml axit nitric v thm nc n 50 ml.
6.4. Dung dch paladi/axit ascorbic
Dung dch A: Cho 500 l axit clohydric vo 1 ml dung dch gc paladi c cha
10 g paladi/l v thm nc n 10 ml.
Dung dch B: ha tan 1 g axit ascorbic trong 100 ml nc.
Chun b dung dch paladi/axit ascorbic bng cch trn mt phn th tch dung
dch A vi mt phn th tch dung dch B.
Cch tin hnh

Dung dch mu th thu c bng phng php phn hy p lc c th c s
dng cho php xc nh m khng phi x l tip.

2.4.1.3. Thy ngn (Hg) _ TCVN 7993 : 2009
Phm vi p dng
Tiu chun ny quy nh phng php xc nh thy ngn trong cc sn phm
thc phm.
Nguyn tc
Xc nh thy ngn trong dung dch th bng o ph hp th nguyn t hi lnh
(CVAAS) sau khi phn hy bng p lc.
Dung dch th c chuyn vo bnh phn ng ca my phn tch thy ngn v
thy ngn c kh bng thic ha tr hai hoc natri borohydrua v cho nhy vo cuvet
ca b phn o AAS bng cch s dng dng kh mang. hp th bc sng 253,7
nm (ng thy ngn) c dng lm php o nng thy ngn trong cuvet. Nu
hm lng thy ngn trong dung dch mu th rt nh, th tt nht nn lm giu thy
ngn trn li platin/vng (k thut hn hng) trc khi xc nh trong cuvet.

1. Axit clohydric, khng nh hn 30 % (khi lng), (HCl) = 1,15 g/ml.

3.4.1. GMP 1: Cng on: Tip nhn nguyn liu
1. M t quy trnh:
Nguyn liu c p trong thng cch nhit v c vn chuyn v cng ty
bng xe bo n nhit nguyn liu 40C. Ngun liu c ra s b v c QC nh
my tin hnh kim tra. Cht lng cm quan, t khai bo vng thu hoch v giy cam
kt ca nh cung cp. QC ch tip nhn nguyn liu cn ti, khng b dp nt v kt
qu th sunfit m tnh.

3.4.2. GMP 2: Cng on: Ra 1

Tng st tm sau khi cn c ra ln lt qua 2 thng nc sch c nhit
40C.
2. Gii thch:
Gim thiu vi sinh vt hin din trn nguyn liu v loi b tp cht trn b mt
nguyn liu.
3. Cc th tc cn tun th:
Nc s dng trong cng on ra phi l nc sch.

Cng nhn phi v sinh sch s, gn gng trc khi tip xc vi sn phm.

Gim thiu vi sinh vt hin din trn nguyn liu v loi b tp cht trn nguyn
liu.
3. Cc th tc cn tun th:
Nc s dng trong cng on ra phi l nc sch.

Dng c, thit b phi c v sinh sch s.
Cng nhn phi v sinh sch s, gn gng trc khi tip xc vi sn phm.
Tm c ra qua 3 thng nc c th tch 100 lt, c lm lnh bng vy
n nhit 40C.
Tm c cho vo r, mi r khng qu 10kg.
Tm phi nhng ngp trong nc v khuy o nh nhng, thao tc phi nhanh
chng. Cc cht bn ni ln trn phi c vt ra khi thng.
Ra 10 r phi thay nc 1 ln.
Tm ra xong phi c chuyn ngay n khu vc phn c.
4. Phn cng trch nhim
Qun c c trch nhim t chc quy phm ny.
QC c trch nhim gim st thc hin quy phm ny. Kt qu gim st phi
c ghi vo biu mu gim st.
Cng nhn trong cng on ny phi c trch nhim thc hin ng quy phm.
3.4.4. GMP 4: Cng on: Phn c, phn loi
1. M t quy trnh:
Tm sau khi ra c bng ti vn chuyn sang khu vc phn c my.
Tm t bng ti ri vo bn np liu ca my phn c. Ti y,tm c ra s
b bng nc sch c nhit 40C.
Tm t bn np liu chuyn ln my phn c nh h thng bng ti.

Tm a ln bn phn loi phi c p .
Tm phi c chia ra theo ng s loai.
Tm c phn lm 3 c: 31/40, 41/50, 51/60.
Phi c s phn cch r rng khi phn c cng lc nhiu l nguyn liu.
Tm cha trong st sau khi phn c phi c p v nhanh chng chuyn
sang khu ra.
4. Phn cng trch nhim
Qun c c trch nhim t chc quy phm ny.
QC c trch nhim gim st thc hin quy phm ny. Kt qu gim st phi

3.4.5. GMP 5: Cng on: Lt PTO X lng ( hoc khng x)
1. M t quy trnh:
Tm sau khi hn c v c a ln bn cng nhn tin hnh lt v x lng,
rt ch theo ng quy cch.
2. Gii thch:
Lt x nhm loi b lp v cng bn ngoi chun b cho cng on tip theo
v loi b phn rut tm theo yu cu ca sn phm.
3. Cc th tc cn tun th:
Nc s dng trong cng on ny phi l nc sch.

3.4.6. GMP 6: Cng on: Cp ng - M bng
1. M t quy trnh:
Tm t bng ti ca t cp ng ri ri xung dn m bng phun c p lc phun
nc t 4-6kg/cm2 m 1 lp bng trn b mt sn phm.
Tm tip tc c mt bng ti c ngng vn chuyn vo t ti ng c nhit
-300C n nh nhit sn phm.
2. Gii thch l do:
H nhit tm sn phm nhm hn ch s pht trin ca VSV.
a nhit ca sn phm v nhit bo qun ca kho lnh n nh cht
lng sn phm trong thi gian di.
M bng nhm to cm quan b mt sn phm nhm hn ch s thng hoa trong
qu trnh bo qun.
Ti ng nhm lm kh b mt sn phm sau khi m bng, ng thi lm n
nh nhit trung tm sn phm.
3. Cc th tc cn tun th:
Nc s dng trong cng on ny phi l nc sch.

3.4.7. GMP 7: Cng on: Cn - Bao gi PE.
1. M t quy trnh:
Sau khi ra khi t ti ng, sn phm c cn thnh tng r vi trng lng
m bng c ph tri, bao gi PE sau hn kn ming.
2. Gii thch l do:
Cn m bo khi lng tm sau khi r ng p ng nhu cu ca khch
hng.
Bao gi PE bo qun sn phm khng b nhim bn, hn ch s mt nc
cho sn phm trong qu trnh bo qun.
3. Cc th tc cn tun th:
Dng c, thit b phi c v sinh sch s.
Cng nhn phi v sinh sch s, gn gng trc khi tip xc vi sn phm.
Ti PE s dng phi l ti t tiu chun.
Cn dng l cn ng h c s chnh xc cao.
Phi thng xuyn kim tra chnh xc ca cn.
Cn ng trng lng m bo r ng khng thiu khi lng tnh.
Khi lng tnh: 1kg/1ti PE.
Tm sau sau khi bao gi phi mang i ghp m ngay v chuyn ngay sang cng
on tip theo.
4. Phn cng trch nhim
Qun c c trch nhim t chc quy phm ny.
QC c trch nhim gim st thc hin quy phm ny. Kt qu gim st phi
c ghi vo biu mu gim st.

3.4.8. GMP 8: Cng on: R kim loi - ng thng - Ghi nhn.


1. M t quy trnh:
Chun b thng sn phm, tin hnh in n, ghi nhn.
Sn phm sau khi bao gi PE c cho qua my r kim loi, sau ng vo
thng c in k hiu c tm, ngy sn xut, loi sn phm ging vi cc thng s in
trn bao PE. Ning thng bng day ai.
2. Gii thch l do:
R kim loi loi ra nhng sn phm b nhim kim loai.
ng thng hn ch s mt nc ca sn phm trong qu trnh bo qun,
thun tin cho qu trnh bo qun, vn chuyn v lm tng gi tr thm m cho sn
phm.
3. Cc th tc cn tun th:
Dng c, thit b phi c v sinh sch s.
Cng nhn phi v sinh sch s, gn gng trc khi tip xc vi sn phm.
My d kim loi phi c chy kim tra trc khi kim tra sn phm.
Phi ring bao sn phm nhim kim loi c cch khc phc.
Sau 1 gi phi kim tra chnh xc ca my d kim loi 1 ln.
My ng dy phi hot ng tt.
Quy cch ng gi:
+ 5 ti PE/ thng carton ai 2 ngang.
+ 10 ti PE/ thng carton ai 2 ngang, 2 dc.

Sn phm sau khi ng thng phi a ngay n kho bo qun. Khng ngoi
qu 10 pht.

c ghi vo biu mu gim st.
Cng nhn trong cng on ny phi c trch nhim thc hin ng quy phm.
3.4.9. GMP 9: Cng on: Bo qun sn phm.

Sn phm sau khi ng thng c nhp vo kho lnh c nhit -18 0C
bo qun sn phm.
