Criteria for the Perfect Hard Boiled Egg

Color

1.Egg white is
a shiny, bright
white. Egg
yolk is a
bright yellow.
2. No gray or
green ring
around yolk

Easy to peel

1. Shell
comes
off egg
easily
without
taking
egg
white
with it.
2. Once
peeled,
egg is
smooth,
firm and
still
retains
shape of
original
egg.

Peel Test-Crack the egg by tapping
it on the table, gently roll the egg
on the table 5 times (back and
forth motion) to produce cracks all
over the egg. Place the egg in cool
water to remove the shell. If
cooked properly shell should
remove easily from egg with no
egg white left on shell. Egg should
be firm, not tough under the
removed shell.

Texture

1. White
and yolk
is firm
not dried
out.
2. No liquid
oozing
and yolk

Knife Test- Use a paring knife,
slice egg, knife should come out
clean (little to no yolk residue)
