Sweet Treats: Happy Vegan Chocolate Chip Cookies

Source: VegWeb.com Recipe submitted by Denise Ingredients: (You have to use vegan varieties of these if you want them to live up to the name...)          2c. unbleached flour 2tsp. baking powder ½ tsp. salt cinnamon to taste (optional) ½ c. vegan chocolate or carob chips (The Allergy Mom uses Enjoy Life Brand) 1c. raw sugar ½ c. canola or vegetable oil 1 tsp. vanilla (no caramel colour*) ¼ c. water

Directions: *Very Important: Make sure all ingredients are at room temperature. This recipe works much better if you follow this advice! **While oven is preheating, put the cookie sheets on top to get them preheated as well. 1. 2. 3. 4. 5. 6. 7. 8. Preheat oven to 350 degrees. In a large bowl, mix flour, baking powder, salt, and cinnamon (if using). Add chocolate chips. Make a well in the center and set aside. In a medium size bowl, combine sugar and oil until well mixed. Add the vanilla and then water. Mix well. Pour wet ingredients into well in center of dry. Mix well but don’t overwork. Spoon onto ungreased cookie sheets and put in oven. Bake for 5 minutes and then flip and rotate the sheets (top-bottom and 180 degree rotation) 9. Bake another 4 minutes and then check them. Read note below regarding checking for doneness. 10. Allow cookies to cool on wire rack until they are less fragile.
**The cookies are done when they seem a little bit softer then you would want them to be. They will harden somewhat as they cool. These cookies stay very light so don’t wait for them to brown. They will still look white when they are done. Experiment with the timing and add 2 minute increments until you get to the desired consistency.
