Spicy Ginger Mango Chicken

from, Happiness in a Pot      2 teaspoon canola oil 4 chicken breast cutlets (about 1 lb) ¼ teaspoon salt ¼ teaspoon pepper ½ cup mango chutney, larger pieces chopped ¼ cup orange juice (preferable fresh, if you happen to have an orange lying around) 1-½ teaspoon finely grated gingerroot (you can pick up pre-grated ginger (usually in a tube or a jar) in the produce section – so much easier!) ¼ teaspoon ground allspice ½ teaspoon sriracha (aka hot chilli sauce, green top sauce, rooster sauce), optional (you can leave it out if you don’t like spicy foods)


 

1. Heat canola oil in large frying pan on medium-high heat. Add chicken. Sprinkle with salt and pepper. Cook for about 2 minutes per side until browned. 2. Meanwhile, combine remaining 5 ingredients in small bowl. Pour over chicken. Reduce heat to low. Cook, covered, for about 5 minutes until chicken is no longer pink inside. Serves 4.
