Tofu Quiche 1 c. tofu (1/2 lb.) ½ tsp. onion powder ½ c. cashews 1 tsp. salt ½ c. water 2 Tbsp. cornstarch ¼ tsp. garlic powder 2 c. sautéed or steamed vegetable pieces Blend all ingredients except vegetables. You may have to stop blender several times and mix with rubber scrapper and blend again to get it smooth. Pour into a bowl and stir in drained vegetables. Pour into unbaked pie shell and bake at 350F for 35-40 minutes. Macaroni and Cheese Cook macaroni noodles. While they are boiling blend your favorite cheese recipe. When noodles are tender, drain and place in a bowl. Pour over enough uncooked cheese sauce to make it like a thick soup and mix gently. About 3 – 3 ½ c. cheese sauce will cover ½ lb. of noodles (dry weight). Pour into a lecithin/oiled baking dish and bake covered at 350 degrees for about 45 minutes or until it begins to brown on the edges. Uncover and bake 10-15 minutes longer.
