Oven Fries ¼ c. nutritional yeast 1/4 tsp. garlic powder 2 tsp. onion powder 1 Tbsp. olive oil 1 ½ tsp. salt 10 c. raw fries (8 medium potatoes) 1 tsp. Country Style Seasoning Mix dry ingredients together. In a very large bowl toss raw fries with olive oil until evenly coated. Sprinkle on yeast mix and toss to coat. Spread evenly on 2 large baking sheets sprayed with PAM or lecithin/oil coated. Bake at 375 degrees for 40-60 minutes. Turn after about 20 minutes. Squash Casserole 8 c. yellow squash, sliced 1 tsp. salt ¼ c. green pepper, chopped 1 tsp. sweetener ½ c. onion, chopped ½ c. seasoned bread crumbs ½ c. soy or cashew mayonnaise 3 Tbsp. gluten flour Steam squash until crispy tender. Drain. Mix all wet ingredients with squash. Mix dry ingredients together. Spread dry ingredients over squash and mix together. Pour into a lecithin/oiled baking dish. Sprinkle more seasoned bread crumbs on top. Bake at 350 degrees for 35-40 minutes. Delicious Sweet Potatoes 4 baked sweet potatoes ½ c. orange juice concentrate ½ c. chopped walnuts Peel and slice sweet potatoes about 1 or 2 inches thick. Then place in a single layer in shallow casserole dish. Spread chopped walnuts on sliced potatoes. Drizzle orange juice concentrate on potatoes. Place in oven for 20 minutes at 350 degrees. Sweet and Sour Beets 4 c. cooked sliced beets ¼ tsp. salt 1 ¼ c. beet juice or water 2 Tbsp. lemon juice 2 Tbsp. cornstarch 4 Tbsp. honey Pour all ingredients except 3 c. beet juice and cornstarch into medium saucepan. Stir with a wire whip until thoroughly mixed. Add beets. Heat on medium heat until beets are hot throughout. In a small bowl or cup stir cornstarch into remaining beet juice. Add to beets and gently stir in. Cook, stirring, until liquid is clear and thickened.
