Executive
Chef
Dan
Marquis
to
the
MH
team.
Most
recently
serving
as
Executive
Chef
at
Chicago
restaurant
EPIC,
Chef
Dan
brings
with
him
an
outstanding
reputation
for
culinary
excellence,
approaching
his
craft
with
deference
for
the
classics
and
an
insatiable
desire
to
create
anew.
This
unique
approach
results
is
cuisine
that
is
at
once
diverse,
innovative
and
intelligent.
Raised
on
160
acres
of
farmland
in
Princeton,
Illinois,
Chef
Dan
has
a
bias
for
scratch
cooking
with
farm-to-table
ingredients.
We
could
not
be
more
excited

continue
evolving
Market
House
in
the
ways
that
mean
the
most
to
our
customers,
says
owner
Carla
Westcott.
Chef
Dan
brings
new
ideas

fresh

House
while

same

Chef
Dan
brings
deep
culinary
background
to
Market
House
having
previously
served
as
Executive
Chef
at
Quay,
Chef
de
Cuisine
at
BIN
36,
and
in
supporting
roles
at
Sushi
Samba,
Bistro
110,
and
China
Grill.
He
earned
his
culinary
degree
at
The
Cooking
and
Hospitality
Institute
of
Chicago.
This
is
an
exciting
time
to
be
in
culinary,
says
Chef
Dan.
Guests
want
food
made
with
the
freshest,
locally-
sourced
ingredients,
and
the
restaurants
that
are
really
listening
are
continuing
to
thrive.
I
am
so
pleased
to
join
Market
House
on
the
Square
as
Carla
and
her
team
make
some
bold
moves
to
stay
in
front
of
this
trend.
Chef
Dan
will
be
updating
the
Market
House
menu
this
spring
to
include
more
organic
ingredients,
homemade
breads,
pasta
and
charcuterieprepared
on
premise,
from
scratch.
In
addition,
the
Market
House
team
will
open
two
new
restaurants
in
June,
one
on
the
first
floor
(off
of
Bank
Lane),
offering
informal,
counter-service
lunch
choices
including
artisanal
pizzas,
salads
and
soups;
and
another
on
the
second
floor
of
the
building
for
dinner,
replacing
MH
Fish
House.
The
Fish
House
will
close
for
remodeling
following
the
dinner
service
on
Saturday,
March
5.
Both
venues
are
expected
to
open
in
early
June
2016.
Market
House
on
the
Square
will
remain
open
during
construction.
