What is Food Science and Tech.

The Food Science and Technology CDE requires students to have an in-depth
understanding of food product development and presentation and food safety
issues. Participants use their sensory skills to solve problems and make sound
decisions

Learning Objectives

Students shall be able to discern flavors ex. Fruits, Florals and Sweeteners

Students shall be able to identify deferent aromas ex. Cinnamon

Rules

Basic food safety and sanitation

Team Product Development Project

Each team will get a scenario for a need of a new food product

They will have 80 min to devololp this product

Example Scenario- Ready to eat breakfast cereal for retail

They can score 800 points as a team (200 a member)

Objective test
This is a 50 question multiple choice test
It will test the basic principles of food science
The student will get 60 min to complete
100 possible points

Customer Inquiry

Each participant will be given five scenarios representing general consumer


inquiries

Participants must determine if the consumer inquiry reflects a quality or


safety issue and determine if it is a biological, chemical or physical concern
or hazard

25 points possible

Food Saftey/Sanitation

Each participant will be given ten situations (e.g., photos, videos, written
scenarios, live demonstrations or a combination).

If participants decide that there is a violation, they will indicate the number
of the violation from the list of problems provided

25 points possible

Trianlge Test

Participants are expected to identify the different samples through flavor,


aroma, visual cues and/or textural differences

15 points possible

Flavor Identification

Participants will be expected to discern the flavor of each sample by taste.

15 points

Aromas

Each participant will be asked to identify four different aromas from vials
provided at each station

Example armomas- Chocolate, Cinnimion

Team- 1.the highest team product development score 2. the highest number of
total points earned in the objective test 3. total points in the food safety and
quality practicum will be used
Individual-1. The highest objective test score 2. the highest food safety and
quality practicum score
