3 TBSP melted butter

2 TBSP flour
1 tsp. salt
1/4 tsp. pepper
2 cups milk
6 medium red potatoes, thinly sliced
2 TBSP minced onion
Sauce--In a microwaveable bowl, add melted butter, salt, pepper and stir the flour in
slowly so it doesn't get lumpy. Stir in the milk. Microwave on high for 8-10 minutes
(stopping the microwave and stirring every 2 minutes). In a large microwave bowl,
layer the potatoes, onions, and sauce until you use up all of the ingredients. Cover
the bowl with a piece of wax paper and poke small slits in it with a sharp knife.
Microwave on high 18-22 minutes, stirring after 15 minutes--test with a fork to see if
the potatoes are soft--if not, cook a few minutes longer. Let stand 5 minutes before
serving.
