THE art of pouring coffee is becoming serious, as more Melbourne baristas turn a cup of coffee into a canvas. Latte art competitions are encouraging coffee makers to become more inventive with their designs. The head barista at 7 Grams Cafe in Richmond, Con Haralambotoulos, practises 60 hours a week in the cafe, adding an extra 20 hours to refine his designs before a major competition.

His signature design is the rosetta. Known as multi-art, he struggles to create four rosettas in the one cup.

Orazio Bellofiore at Brunetti prefers more abstract designs. The marbled top is his signature. "I try to do patterns because they're more challenging and involve more intricate styles of pouring," Mr Bellofiore said
