Dana's Enchiladas 1 Can Chipotle Peppers in Adobo Sauce 1 15 oz can Diced Tomatoes 1 2 Lb.

Beef Roast 7-8 Cloves garlic, minced 2 Large Yellow Onions, sliced into slivers (so they will blend in with beef) 1 Tablespoon Parsley Flakes 1 16 oz block Mozarella cheese (or 2 cup bag shredded will work too) 1 15 oz can Refried Beans 1 Package Medium or Large Soft Tortillas 1 Large can or 2 small cans Green Enchilada Sauce 1 8 oz bag Fiesta Shredded cheese (Mexican or Cheddar will work as well) 1-2 Tablespoons Sugar Salt & Pepper to taste 2-4 Tablespoons of Plain Cornmeal (not cornmeal mix) Add first 6 ingredients to pressure cooker, add enough water to cover beef, add 1 tsp. salt. Cook in pressure cooker for 50 minutes. Remove from heat, take off lid, and check water level. If chance of boiling dry, add more water, then put l id back on and cook under pressure for 50 more minutes. Preheat oven to 350 degr ees now. Remove from heat, take off lid, remove meat onto a plate, and pull apar t with forks. If you can stand the heat, leave the peppers in but remove and mas h with a fork and add back into juice. If it's hot enough as it is, just remove the peppers and disgard. Add meat back into mixture and boil a few minutes to co ndense juice. If there's still too much juice, you can sprinkle cornmeal in to t hicken. Start with 2 tablespoons first, then add more until desire thickness is reached. Check seasonings. Add salt, pepper, sugar (and garlic powder and onion powder if not garlicy or oniony enough) to taste. Spray the bottom and sides of a glass baking dish with cooking spray. Cut the mo zarella up into 1/2 inch square logs (1/2" x 1/2" x 3"). Put down a tortilla, sp read a tablespoon of refried beans across it near one end, add a ladle of meat m ixture, and 2 logs of mozarella. Wrap up and put in glass baking dish. Repeat un til you have a layer of enchiladas. Spread a thin layer of green enchilada sauce over the top then add a layer of shredded cheese. Make another layer of enchila das, spread more green enchilada sauce, and top with more shredded cheese. Bake for about 45 minutes or until cheese is melted. Any leftover meat mixture can be used to make barbeque by adding some brown suga r.
