皮的材料:麵粉(500公克)、溫水(400公克)

餡的材料:大白菜(1/2顆)、素雞丁(少許)

調味料:鹽(少許)

作法步驟:

1.麵粉加溫水,揉到麵糰光滑後,讓麵糰醒10分鐘。

2.醒好的麵糰用刀切成許多長條(像桿麵棍粗細),再將揉成均勻的長

條,並切成一節一節,灑上麵粉分別壓成一個個小圓型,再用桿麵棍

桿成一片片薄薄的皮。(記得一邊桿皮,不時要灑些麵粉,才不容易沾

黏)

3.將適量的餡料放在皮的中間,將皮對折把中間對捏,再利用雙手的拇

指與食指捏緊左右二側,儘量讓餃子形狀保持立體即可。(記得不可有

漏口)

4.平底鍋放油燒熱,放入餃子先煎至底部微黃再加水,水量與餃子平

齊,加蓋煎到水份完全收乾,餃子底部變金黃色即可起鍋。

備註:將做好的餃子先放入冰箱冷凍層冷凍,再取出做煎餃,較容易

煎。
