500g beef chunks or steak mince 1 chorizo sausage (diced) 2 medium onions 1 clove garlic 200g Tin red peppers - pureed 400g Tin chopped tomatoes 1/2 tsp ground cumin 1/2 tsp oregano 4 chipotle chiles in adobo sauce 500g Tin black beans salt & pepper to taste Sour cream to garnish chopped spring onions to garnish
Instructions Saute the onions and garlic for 5 minutes, add the beef and chorizo and brown well on a high heat for 10-15 minutes. Add the tomatoes, pureed peppers, spices and chipotle chiles. Reduce the heat and simmer for 25 minutes, stir occasionally and add more water if necessary. Add the black beans and simmer for a further 15 minutes. Season to taste then serve with boiled rice and garnish with sour cream and chopped spring onions
