Tandoori Cornish Hake with Citrus Raita Serves: 8 Hungry Cornishmen Preparation Time: 35 minutes Total Time: 40 minutes Oven Temperature: Maximum Grill
INGREDIENTS:         

1 large Cornish Hake Gutted 4 tablespoons (60ml) tandoori paste 1/2 cup fat free yoghurt Cornish sea salt to taste. Citrus raita Flesh of two oranges, finely chopped Small handful of fresh coriander leaves, finely chopped 1 green chilli, finely chopped 1/2 cup fat free yoghurt Salad garnishes.

METHOD: 1. 2. 3. 4. 5. Preheat the oven to maximum grill. Combine the tandoori paste and yoghurt and marinate the fish. In the meantime make the citrus raita by mixing all the ingredients together. Grill the fish in the oven for 30 minutes. Serve on a bed of salad with citrus raita.
