W h i t e B e a n & Tu n a S a l a d

Serves 4 Preparation time: 15 minutes

1. Arrange the spinach or beet leaves along with the beans, tuna, cucumber, tomato and parsley on 4 serving plates. 2. Mix together the dressing ingredients and season to taste. Pour the dressing over the salad just before serving.

C o o k ’s t i p s
Serve with warm crusty bread. Replace the tuna with canned salmon.

I n g re d i e n t s
Salad: 100g/4oz baby spinach or beet leaves 1 (400g) can cannelloni beans, drained well 1 (400g) can tuna chunks, drained well

D re s s i n g : 30ml / 2 tbsp Filippo Berio Olive Oil 2 tbsp fresh lemon juice Salt and freshly ground black pepper

⁄2 cucumber, diced
