THE BEST BANANA CAKE IN THE WORLD 125 g unsalted butter 1/2 cup light muscovado OR brown sugar 1/2 cup

caster sugar 1 tsp vanilla bean paste or natural vanilla extract ...2 eggs 1 1/2 cups self raising flour, sifted 1/2 tsp bi carbonate of soda, sifted 1/4 cup full cream milk 3 bananas mashed 1/4 tsp salt Preheat oven to 170ºC fan forced. With an electric mixer cream butter, both sugars and vanilla till pale, and fluffy. Add 1 egg at a time mixing thoroughly each time. Add flour, bicarb & salt and fold in with a wooden spoon till fully incorporated. Add milk and banana and fold in. Line a 20 cm round cake tin with parchment. Pour batter into tin and bake for about 40 mins or till an inserted skewer comes out clean.
