Green Papaya and Mango Salad with Vietnamese Caramelized Shrimp

(yields 4 orders)

, Green Papaya and Mango Salad

, 1 ea. Green Papaya, Peeled and julienned

1 ea. Mango, ripe, peeled,

and sliced into 12 pieces 2 cup Micro Cilantro or Picked Cilantro

2ea. Shallot, peeled, julienned, fried

Method: Peel the green papaya, cut in half and deseed. Get a mandolin with a julienne attachment. You want fine shreds of green papaya. Not to thick but no so thin that you lose the texture. Try to get something in the shape of angel hair pasta. Set aside

Nuoc Cham Dressing

2ea. Limes, juiced

112 cup White Vinegar 112 cup Sugar

112 cup Fish Sauce

1 t. Garlic, minced

1 t. Ginger, minced

11. Siracha or Hot Chili Paste

Method: Mix all ingredients and taste. Add more sugar to taste or chili paste to taste. Set aside and chill

Vietnamese Caramelized Shrimp

20ea, 16-20 Shrimp, peeled

and deveined

2ea. Garlic Cloves, sliced thin

1f2 T. Olive Oil

1T Sugar

1 T. Fish Sauce

1f2 t. Black Pepper

Method: In a hot, seasoned pan add oil, garlic and shrimp. Sear one side and then add sugar, black pepper and fish sauce. Cook till sugar is dissolved and shrimp is cooked through, Get ready to plate.

Plate Up: Combine green papaya and mango scraps in a bowl and dress with Nuoc Cham. Check for seasoning. If necessary add more dressing. On a rectangular plate, place four slices of mango across the plate at

1 inch intervals. Top the slices with

a line of green papaya salad. Top

that with 5 pieces of the caramelized shrimp. Top the shrimp with the micro cilantro and finish the plate with a drizzle of Siracha sauce and some fried shallots.

Benjamin Seto is a former newspaper reporter and editor, and now pens the regional food blog, Cooking with the Single Guy, from his home in Oakland.

Ja-ja Mien (Makes 2 servings). Pair with a glass of sake.

Ingredients:

6 oz. ground pork

1 can sweet bean sauce (6 oz.) 1 onion. diced

1 cucumber. seeded and thinly sliced 2 stalks of green onion, thinly chopped (mostly white section, about 1/4 cup)

8 oz. dried noodles (preferably wheat, but rice noodles is OK)

1 t white pepper

1 T soy sauce

1 T sesame oil

1 T hot chili sauce (adjust to your taste)

1/2 cup chicken broth 2-3 T Canola oil

Directions: Marinate the ground pork with the ground white pepper, soy sauce and sesame oil. Let sit for about 10 minutes.

Heat oil in a wok or large skillet over medium high heat and then add onion and green onion (scallions) for about

2 to 3 minutes to soften the onion. Then add pork and cook until brown, breaking up the meat into little pieces. When pork looks fully cooked, add sweet bean sauce, chicken broth and chili. Lower heat to simmer and cook cover for another 15 minutes to let the sauce thicken. Taste to see if you need to adjust hot sauce level or add more soy sauce. When done, remove from

heat and let cool.

Slice cucumber to very thin pieces.

In a pot, boil water and cook noodles per package instructions. When done, place noodles into two separate bowls and then divide sauce and cucumber and place on top. When ready to eat, mix everything together and dig in.

TIP: The sweet bean sauce may be hard to find. Look for it with other bean sauce that is used for Szechuan cooking. If you still can't find it, I've heard some people use miso paste as a replacement. (If using miso paste, you might not need to use 6 ounces but maybe more like 2-3 tablespoons.)

BUCK THE WHEAT: Most recipes I've found for ja-ja mein recommends wheat noodles. In Chinatown stores, it's hard to find wheat noodles used for Northern Chinese dishes. Many of them sell Japanese soba noodles, which works just as fine.

Lamb VindaJoo (serves four) This magnificent dish is fit for Maharajas and devoted fans of very spicy food. This recipe has a kick that can make you sweat.

Ingredients:

1-2 teaspoons of chili powder 1 large onion finely chopped

1 teaspoon turmeric

2 teaspoon cumin seeds

2 teaspoon coriander seeds 2 garlic cloves minced

4 Tablespoons oil

2 teaspoon garam masala Salt to taste

6 Tablespoons oil or ghee % cup of vinegar

2 teaspoons ground mustard seeds 2 teaspoon cayenne pepper

2 pounds of lean boneless leg of lamb

% cup water

Mix all the spices with the vinegar

Directions: Heat oil or ghee in a large suacepan and put the mixture of spices into it and fry for 10 minutes. Add the pieces of boneless leg of lamb into the pan. Keep on stirring and roasting for 20 minutes Add some water. Cook for 5 minutes on low heat. Garnish with cilantro.

ASIAN AMERICAN JOURNALISTS ASSOCIATION SAN FRANCISCO BAY AREA CHAPTER

With more than 200 members, the San Francisco Bay Area chapter is the second largest AAJA chapter, only behind the New York chapter.

This year, the Bay Area chapter marks its 25th anniversary. It was formed in April 1985 by 15 Bay Area journalists. By September of that year, the Northern California chapter of AAJA - as it was then called - numbered 47 dues-paying members.

The Bay Area Chapter organizes networking mixers, as well as the following services and social events for its members:

WORKSHOPS - We hold workshops on various topics from multimedia to blogging to help our members broaden their skills in our evolving industry.

COMMUNITY ACCESS WORKSHOP - Many community groups don't know how to contact the media. This workshop is designed to demystify the media for community-based organizations that have a message, issue or concern.

SCHOLARSHIPS - We honor the best and the brightest journalists of tomorrow with scholarships to further their education, this year awarding $10,000.

GRANTS - We award grants to professionals to attend the national AAJA convention in August, the UNITY convention held every four years and the Executive Leadership Program.

STUDENT PIZZA NIGHT - Pizza and journalism. What a combination. Twice a year, the chapter hosts student pizza nights where high school, college and graduate students can meet with professionals in an informal setting.
