Homemade Kit Kat Bars

75 club crackers 1 cup butter – not margarine 2 cups graham cracker crumbs 1 cup firmly packed light brown sugar ½ cup whole milk 1/3 cup sugar 2/3 cup creamy peanut butter ½ cup semisweet chips ½ cup butterscotch chips

Line an ungreased 133x9 pan with one layer of crackers, cutting to fit if necessary. In a large saucepan, melt butter over medium heat. Add graham cracker crumbs, brown sugar milk and sugar. Bring to a boil and boil for 5 minutes, stirring constantly. (Begin timing 5 minutes from when you see the first bubbles.) Remove from heat and spread half of the butter mixture evenly over crackers. Place another layer of crackers evenly over the butter mixture, cutting to fit. Spread remaining butter mixture evenly over the crackers. Top evenly with remaining crackers. In a small saucepan, combine peanut butter, chocolate chips and butterscotch chips. Melt over medium-low heat, stirring constantly. Spread evenly over top of crackers. Cover and chill for at least one hour. Cut into bars, store in fridge.

** I think it takes about 1 ½ boxes of crackers. Let the butter mixture cool for 3-4 minutes before you try to spread it. Drop it in “dollops” over the crackers. You will have to spread it thin to get it to cover
