Neapolitan Cake

Adapted from Women’s Weekly

9 Tbs. unsalted butter ½ tsp. vanilla extract 2/3 cup sugar 2 eggs 1 ¼ cups all-purpose flour 1 ½ tsp. baking powder ¼ tsp. salt 1/3 cups milk 1 Tbs. cocoa powder 2 tsp. milk, extra ¼ cup strawberry puree Beat the first 4 ingredients with a mixer until light and fluffy. Mix in flour, baking powder, salt, and milk until combined. Divide batter into three bowls. Mix cocoa powder and 2 tsp. milk into one bowl. Mix the strawberry puree into another bowl of batter. Leave the third plain. Pour the batter into individual 6” pans or small loaf pans. Bake at 350F until done, approximately 30 minutes. Cool completely. Once cooled, level the cakes and stack using desired frosting. Tastes great frosted with chocolate ganache.
