Preparation - Fire Roasted Sriracha Chicken Wings
Make a marinade with coriander, cumin, salt, and oil. Marinade wings for 4 hours in a ziploc bag. Over very low heat, melt butter and wisk with basil, lime zest, sriracha sauce, and garlic. Get your Big Green Egg or grill up to 350f on indirect heat and cook for 30 minutes. Flip chicken. Cook another 20 minutes and toss in the sauce. Cook 10 more minutes, to crisp up the sauce. Serve with the usual suspects (celery & blue cheese or ranch).

Preparation - Parmesan Crusted Chicken
Preheat oven to 450 degrees F. Prepare the chicken by halving and then halving again lengthwise. (Whole chicken breast are a bit too big. Making smaller pieces ensures that the coating will not burn before the chicken is cooked through.) Pound to about 1/2 inch thick. Blend the egg whites, cornstarch, and lemon juice with a fork in a wide, shallow dish; set aside. Combine the bread crumbs, parmesan, parsley, salt, pepper, and zest in a second wide, shallow dish. To crust the chicken breasts, dip each in the egg white mixture and then roll in the bread crumbs. Then transfer the chicken to a rack set over a baking sheet. Air-dry the chicken for 20-30 minutes to help

set the crumbs. To cook, first saute the chicken on the stove in an ovenproof skillet. As you put the chicken in the pan, lay it towards you. This way each piece will rest on top of any crumbs that fall off. Saute until the chicken is golden and crisp on one side, then carefully flip the pieces over. Cook until golden. Finally, transfer the whole pan to a 450 degree oven to finish. Cook for 8 to 10 minutes in the oven. If you are serving this with Sage-Butter Sauce and Roasted Potatoes with Garlic and Rosemary, begin roasting the potatoes while the chicken is air drying on the rack, then prepare the sauce and keep it warm in a warm water bath. It will hold just fine for at least an hour. For the Sauce - saute the shallots in butter in a small saucepan over medium heat until soft, 2 - 3 minutes. Add the wine, cream, broth and lemon juice. Simmer until reduced by half, 8 - 10 minutes. Whisk in butter, 1 Tbl at a time, stirring constantly. Do not add more butter until previous addition has melted completely. Finish sauce with sage and seasonings. Keep warm

1. Preheat oven to 350 degrees. Prepare 9inch wide 3inch deep cake pan. 2. Put the grated carrots into a large mixing bowl, set aside. 3. Sift the flour, baking powder, baking soda, spices, and salt into the bowl with the carrots. Toss until they are well coated.

4. In a food processor, combine the sugars, eggs, and yogurt. While processing, drizzle in the oil. Add this mixture to the carrot mixture. Stir until just combined. Pour into prepared pan. 5. Bake for 45 mins. adjust oven to 325 degrees and bake 20 mins. longer or until a skewer is inserted in the center of the cake and comes out clean. Cool for 15 mins. before turning cake out. Cool cake completly and cover with your favorite frosting. I love it with cream cheese frosting!

1Make the special sauce by dissolving the sugar in water in a small bowl. 2Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil. 3Mix well and refrigerate this sauce until you're ready to serve. 4Combine the hot water with the hot mustard and set this aside as well. 5Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps. 6Bring oil to high heat in a wok or large frying pan. 7Saute chicken breasts for 4 to 5 minutes per side or done. 8Remove chicken from the pan and cool. 9Keep oil in the pan, keep hot.

Prepare basting sauce by heating together 1/2 stick butter, 1 tablespoon honey, 2 tablespoons Worcestershire sauce, and 4 tablespoons water. After loin begins to brown, baste every 10 minutes. Prepare shrimp sauce by heating 1/2 stick butter. Add 1 tablespoon chopped onions, 1/4 cup green onions and 1/4 cup parsley, saute five minutes. Add 1/2 teaspoon thyme, 1/2 teaspoon white pepper, 1 teaspoon salt, 1/2 teaspoon oregano, 1 dash Tabasco sauce, 2 dashes Worchestershire sauce, shrimp and 1/4 pound crawfish tails. Saute 5 minutes. HEAT FAT IN LARGE SAUTE PAN or Dutch oven with lid. Liberally salt and pepper both sides of meat and brown in hot fat on both sides until colored a deep mahogany. Add carrots and potatoes and sprinkle with rosemary, salt and pepper. Add onion slices and water. Reduce heat to simmer. Cook, covered, 30 minutes. Check for doneness by cutting into thickest part of roast. It usually takes 35 to 45 minutes for medium rare. Dont overcook. Remember that meat continues to cook a little after it is removed from stove. Arrange meat and vegetables on platter and serve hot. If you wish, you may sprinkle 3 tablespoons flour over pan drippings, place pan back over medium heat and cook, stirring constantly, until thick and smooth. Slowly add 2 cups water, stirring. Preheat the oven to 375 degrees F (190 degrees C/gas 5), and find a snug-fitting pot for the chicken. Season it generously all over with salt and pepper, and fry it in the butter, turning the chicken to get an even color all over, until golden. Remove from the heat, put the chicken on a plate, and throw away the butter left in the pot. This will leave you with tasty sticky goodness at the bottom of the pan, which will give you a lovely caramel flavor later on. Put your chicken back in the pot with the rest of the ingredients, and cook in the preheated oven for 1 1/2 hours. Baste with the cooking juice when you remember. The lemon zest will sort of split the milk, making a sauce, which is absolutely fantastic. To serve, pull the meat off the bones and divide it on to your plates. Spoon over plenty of juice and the
