An inspection of the above food service establishment on December 13, 2010 by Heidi Mason and Dawn Watkins, of this office, revealed violations of the provisions set forth in Article II-A of the Onondaga County Sanitary Code, Part 14 of the New York State Sanitary Code, and the Public Health Law as follows:

1. Cooked shrimp stored next to raw fish in reach-in cooler at end of cook line (corrected). 14-1.10, 14-1.43

2. Spray bottles of chemical not labeled. Toxic chemicals stored above single service gloves.

Buckets of sanitizing solution noted stored on preparation counters throughout kitchen. (All corrected). 14-1.10, 14~1.60

3. Container of chips and container of lemons not stored protected, Containers of food noted double stacked without hard covers in walk-in cooler. Chips and salsa at bar not stored protected from public. 14-1.40,14-1,42

4. Clean sanitized pans not completely air-dried before stacking. 14-1,116

5. Two reach-in coolers at cook line lack thermometers (corrected), 14-1.44

6. Exterior of some bulk food storage containers noted in poor repair and/or not clean. 14~1.90

14. Light shield in liquor room lacks end caps, 14-1.88

AU of the above-cited violations must be corrected by December 29, 2010. Please be advised that a Commissioner's Hearing has been scheduled on January 18, 2011 at 9:00 A.M. for violation of the Onondaga County Sanitary Code and Part 14 of the New York State Sanitary Code. Enclosed you will find a hearing summons which describes this proceeding.

Please be advised that should these above-cited violations be found during the next routine inspection, a Commissioner's Hearing will be scheduled for repeated non-compliance with Sanitary Code provisions.
