Louisiana Pecan Balls

These delicious and tender cookies are sure to be a hit with your kids; they simply melt in the mouth leaving behind a delectable taste. What you need: 2 cups of all purpose flour 2 cups of powdered sugar 1 cup of chopped pecans (approx 4 oz.) 1 cup (1/2 lb.) butter (room temperature) 1/4 teaspoon of baking powder 2 teaspoons of vanilla 1. Take a large bowl and beat the butter, vanilla, and ½ cup of powdered sugar using a mixer at medium speed. The mixture should become smooth. 2. Take a medium sized bowl and mix the baking powder and flour. Add this mixture to the previously made butter mixture and stir continuously to mix the two. Beat the mixture until it is well blended and then stir in the pecans. 3. Take the dough and shape it into multiple one inch balls. This recipe will make about 28 of these cookies. Place each cookie on a buttered 12 x 15 inch baking sheet, maintaining a distance of one inch between each cookie. 4. Bake the cookies in a 300º convection oven for about twenty five minutes. The cookies should become pale golden brown. Wait for the cookies to cool down a little so that they can be handled comfortably. 5. Take a shallow bowl and put the remaining 1 and 1/2 cups of the powdered sugar in it. Now roll the warm cookies in this sugar such that they are coated all over. Any remaining sugar can be discarded. Place the cookies on racks to cool down. The convention oven gives a more even heating space, so even if you are using two baking sheets at the same time you do not need to switch their positions.
