Aromatic Lamb with Dates

Olive oil Onion finely chopped Lamb lean diced boneless Sweet potatoes small chunks Ground coriander Ground cinnamon Tomato puree Coriander roughly chopped 1 tbsp 1 500g 300g 2 tbsp 2 tbsp 1 tbsp 2 tbsp 2 2 1 kg 600g 4 tbsp 4 tbsp 2 tbsp 4 tbsp 75 5 2.5 1.5 50g 50g 75g 150g

1. Heat oil in a large pan, add the onion and the lamb and quickly fry until the lamb is lightly browned. 2. Add the sweet potatoes and spices then mix well. 3. Pour in 425ml boiling water and tomato puree then bring to boil. 4. Cover and simmer for 15 minutes until the sweet potatoes and lamb are tender. 5. Add the dates for the final 10 minutes. 6. Check the consistency and seasoning and correct if necessary. 7. Sprinkle with coriander and serve with couscous.
