BOBOTIE (South African, serves 8-10, baking time 50-60 mins) 1 kg minced beef or lamb 1 large onion, chopped 1 tblsp butter

or oil ½ c raisins, chopped ½ c slivered almonds 10 dried apricots, chopped 1 thick slice white bread 1 c milk 1 tblsp curry powder 3-4 tblsp lemon juice 1 tbl sp apricot jam 2-3 small bay leaves 1 tsp salt ½ tsp pepper 2 eggs cooked rice, chutney, chopped nuts & coconut for serving In frying pan, saute onion in butter/oil until golden. Meanwhile in large bowl soak bread in half the milk, then break apart with a spoon. Add onion to bread. Add mince, raisins, almonds, apricots, curry, lemon juice, jam, salt & pepper. Mix well. Spoon into 10-cup casserole. Bake uncovered 180°C until browned, about 30 mins. Meanwhile beat together eggs and remaining milk. Pour over meat. Top with bay leaves. Continue baking until custard is set and golden brown, 20-30 mins more. Serve with rice and assorted condiments. Note: I make half mixture and use leftovers for a second meal few days later.
