Roast chicken makes for an excellent dish and the olive relish takes the taste to a different level. This recipe makes enough for 4 servings and is sure to be a hit with friends or family.
What you need: 4 chicken breasts (skin on) (with bone or boneless) 1/4 cup of green olives, (roughly chopped and pitted) 3 tablespoons of olive oil 2 Roma tomatoes (optional), roughly chopped 1 teaspoon of kosher salt 1 clove of garlic, (chopped) 1/4 teaspoon of black pepper 2 tablespoons of fresh flat-leaf parsley, (chopped finely) 4 teaspoon sprigs of fresh rosemary 1 5-ounce bag of spinach or mixed baby greens 2 cloves of garlic (sliced) 1. Take a 12 x 15 inch baking dish and place the chicken in it. Add about two table spoons of olive oil, one teaspoon of kosher salt, ¼ teaspoon of black pepper, sprigs of rosemary, and the two cloves of sliced garlic. Spread them evenly in a single layer, with the skin side of the chicken facing up. 2. Bake in a 425° F pre heated toaster oven for about thirty five minutes. The contents should be properly cooked by now. 3. While the chicken gets roasted, take a small bowl and mix the green olives, one clove of chopped garlic, the remaining olive oil, two table spoons of parsley, and the two tomatoes (if desired). 4. Serve by dividing the chicken and greens on four individual plates and add the olive relish over both of them.
