Fish and Chips

The classic fish and chips never tasted better. With this recipe you can make four servings to enjoy with family or friends.

What you need: 1 3/4 pounds of Yukon gold or red potatoes, cut in chunks of 1-inch 8 sprigs of fresh thyme 4 tablespoons of olive oil 4 pieces of cod (6-ounce each) 1 1/4 teaspoons of kosher salt 1 lemon, cut in half 1 clove of garlic, sliced 1 1/4 teaspoons of black pepper 2 tablespoons of capers, drained 1. Heat the toaster oven to 450° F temperature. Take the toaster oven baking tray and place in it the potatoes, one tea spoon of salt, quarter teaspoon of black pepper, two table spoons of oil and four sprigs of fresh thyme. Toss them properly. Spread the contents evenly in a single layer and bake for about twenty five to thirty minutes in the pre heated toaster oven, occasionally stirring. The bake should turn golden in color. Put the contents in a large enough piece of foil and properly wrap to keep the contents warm. 2. Wipe the baking tray clean and place the cod in it. Cut the half lemon into thin slices and place them on top of the cod. Add capers, garlic, remaining pepper, thyme sprigs, and salt on top. Drizzle the remaining olive oil on top. Bake in the pre heated toaster oven for eight to twelve minutes, depending upon the size of cod. 3. Place the potatoes and cod on to individual serving plates. Take the remaining half of the lemon and squeeze over the baking tray. Put in the oven for about five minutes to let the juices get warmed through. Finally, put the sauce on top of the cod and the potatoes. A toaster oven is great for making such dishes and consumes less electricity than a traditional oven.
