. THE NEXT TIME YOU PURCHASE ICE CREAM FROM YOUR LOCAL SUPERMARKET LOOK AT HOW IT IS SOLD. ICE CREAM IS NOT SOLD BY WEIGHT, IT IS SOLD BY VOLUME. THEREFORE, YOU WILL PURCHASE TWO PINTS ( 32 OUNCES ) NOT TWO POUNDS ( 32 OUNCES ). WHAT WE DO IN THE SOFT SERVE ICE CREAM BUSINESS IS CHANGE THE PROPERTIES OF A FLUID OUNCE BY INTRODUCING AIR. WHEN YOU SEE ONE OUNCE THAT MEANS IT IS A SOLID. A DIME WEIGHTS ONE OUNCE, A PAPER CLIP WEIGHTS ONE OUNCE, IF YOU PUT BOTH ON A SCALE IT WOULD WEIGH TWO OUNCES. A FLUID OUNCE MEANS IT IS A LIQUID. WHEN YOU TRY TO COMPARE FROZEN DESSERTS, WHETHER IT BE ICE CREAM OR YOGURT, YOU NEED TO KNOW HOW DENSE THE SUBSTANCE ( PRODUCT ) IS, AND HOW IT WILL REACT TO THE INTRODUCTION OF AIR.
