Yellow Pepper and White Bean Soup with Sage

1 gallon Great Northern Beans 2/3 cup olive oil 6 yellow peppers (seeded and diced) 6 medium onions (chopped) about 6 cups 1/3 cup garlic (minced) 1 #10 can tomato picados 1/2 cup sage leaves, chopped fine 2 tbsp salt 2 1/4 cup thickened soymilk 3 tbsp lemon pepper 2 Tbsp lemon peel 1/2 C. vegetable stock, or 1 C. rubber chicken Saute' onions until translucent, add garlic, cook for 3 minutes more. Add yellow bells, saute for 3 minutes. Add beans, cover with water, add dry seasonings. Cook for approximately 2 hours. Turn burner off, add vinegar and fresh sage.
