ANN CORNELISEN’S PASTA
W I T H A R U G U L A and P A N C E T T A
T he wonderful prose stylist Ann Cornelisen lived in Cortona for 25 years. She was
our close friend in our first years in Italy and I dedicated Under the Tuscan Sun
to her. If you’ve never read Torregreca and Women of the Shadows, I highly recommend
both. Ann didn’t like to cook, but she had a few specialties. Her pasta with arugula
is on my top five pastas list—for its taste first, but also because it is molto veloce—
very fast.
Serves 4 to 6 Bring a pot of water to boil, salt it, and
then add the spaghetti. Cook until al
1 pound spaghetti
dente and drain, reserving ½ cup of the

I developed such an intimate relationship with my cookies that it just seemed plain wrong not to give
them a proper name. And so I did. Lucia, Lana, Penelope, Miranda, Susanna, and Juliette were born to bring happiness
into the world. Lucia, my great-grandmother’s namesake, is a layer bar comprised of buttery shortbread, espresso-spiked
homemade caramel, and swirls of bittersweet and white chocolates—not just another pretty face, and undeniably decadent
as well. The spiciest of the bunch—with candied and powdered ginger plus cinnamon and nutmeg—has a natural,
no-frills way about it, so the moniker Susanna seemed most fitting.

My idea was to create something that is a tribute, an homage of some sort, to my family, who taught me that food is far more than
nourishment for the body. What better way to recognize that than by adorning my boxes of cookies with photos of them? One is
of my paternal grandmother (Nanny) and her sister. They are in their late twenties and clearly ready for a special occasion, replete
with fancy hats, coats, and red lipstick. These photographs could just as easily tell someone else’s story. My customers see their own
families on the boxes, and the cookies that fill them are reminiscent of the Christmas cookie platter they share at their gathering.

I definitely don’t have time anymore to cook for hours every
day—not if I want to spend time at the table with Todd and Jade.
But I still love food and cooking and want to eat a nice dinner! So I’ve really shaken up
my weeknight repertoire to include only dishes that I can pull together after a full day. All
of these recipes (except the sides and desserts) make main-course servings. And they
can all be accomplished in under an hour—with most on the table much faster than
that: Rustic Vegetable and Polenta Soup, a hearty soul-warming one-pot dish, cooks
in under twenty minutes; Lemony White Bean, Tuna, and Arugula Salad is a great meal
that’s quickly assembled from pantry and fridge essentials; Ham, Gruyère, and Apple
Panini are gooey, cheesy, crunchy, and delicious in ten to fifteen minutes; Spicy Linguini
with Clams and Mussels is a fifteen-minute-or-less spectacular pasta; and you can’t

There is a moment when your mayonnaise could separate or break. If you have a
watery mixture of egg and oil, the culprit is most likely over-hastily pouring the oil at
the beginning of the process. Don’t worry—the mayonnaise is still savable. Crack a new
egg yolk into a clean bowl, and very slowly pour the broken sauce into the yolk while
whisking, just as you did the first time with the olive oil. Stay patient while you pour,
and it will work for you the second time.

O ver the last decade, a number of
new patents have recognized
research in renewable bio-based and
biodegradable materials as replacements
for the petroleum-based solvents that
have been in common use in a myriad
of industrial applications (including
agriculture, pharmaceuticals, food
additives, biofuels, paints, coatings,
and cleaners). Many of the new, highly-
effective solvents, including ethyl
lactate, methyl soyate, and d-limonene,
are based on such food stocks as corn,
soybeans, and citrus fruit. Thanks to
these recent developments and stricter
federal Environmental Protection Agency
(EPA) and Occupational Safety and
Health Administration (OSHA) standards,
printmakers today can feel comfortable
knowing that if they educate themselves
and their students about the new bio-
solvents and use a little common sense,
they can safely continue to make fine art

With your camera ready, it’s time to start thinking about what to shoot. How do you see the
world, and how do you want to share that vision in your images? We encourage you to keep a
visual journal and start compiling things that inspire you. rip up magazines, collect images (not
just photographs), and start to learn what colors go together, how lines work to direct your eye,
what to include in a shot as well as what to leave out. You will start to see themes arise and can
then look for those elements of color, tone, and subject in your daily life. soon you will start
seeing them everywhere, and before you know it, you will be developing your style.

If you get stuck for what to shoot, go for a walk and take photographs of the world around
you—shadows, details, and light. Another great thing to do is to start an idea collection. Fill a
bowl with words that are cut or ripped from magazines and other publications. When you feel
stuck on what to shoot, pull out a word. then create photos or a photographic story around
that word and the colors around it on the scrap.
