WHY IT’S LIGHT For beefy taste without excess fat, pick ground sirloin instead of chuck. This chili is also bulked up with extra portions of beans and tomatoes. Cocoa powder adds complexity but not sweetness. Briefly cooking the cocoa, chili powder, and tomato paste before adding the beef helps intensify their flavors.

The Tuscan Sun Cookbook
Recipes from Our Italian Kitchen
Frances Mayes and Edward Mayes Photographs by Steven Rothfeld
For cooks and travelers who appreciate the gusto and beauty of Italian life, and for readers of the bestselling phenomenon Under the Tuscan Sun, Frances Mayes’s debut The Tuscan Sun Cookbook celebrates the ease of the Tuscan kitchen and the joys of the table with more than 125 recipes, stunning food and lifestyle photography, Frances and Ed’s delicious stories, all revealing why the Italians know how to eat like the gods. Tuscan food is, above all, genuino. Frances Mayes and her husband, Ed, welcome readers to Bramasole, their home in the Tuscan countryside, introduce their friends, and shares recipes that they have enjoyed as honorary Tuscans. From Antipasti (starters) to Dolci (desserts), the book is organized in the way Italians enjoy their dinners. With 150 color photographs of finished dishes, garden-fresh produce, and evocative scenery, these from-the-heart-of-Tuscany recipes show home cooks that secret ingredient: the pleasure of the simple, traditional kitchen. Home cooks will soon be able to pour a glass of wine, throw on another handful of pasta, pull up a chair, and languish in the rustic Italian way of life. Named the “bard of Tuscany” by the New York Times, FRANCES MAYES is the author of the bestsellers Under the Tuscan Sun, Bella Tuscany, Every Day in Tuscany, and, with EDWARD MAYES, In Tuscany and Bringing Tuscany Home. Edward is the prize-winning author of four books of poetry. Photographer STEVEN ROTHFELD, author of French Dreams, Shrines, and Italian Dreams, contributes to many magazines, as well as to books for Frances Mayes, Patricia Wells, and André Aciman.

he wonderful prose stylist Ann Cornelisen lived in Cortona for 25 years. She was our close friend in our first years in Italy and I dedicated Under the Tuscan Sun to her. If you’ve never read Torregreca and Women of the Shadows, I highly recommend both. Ann didn’t like to cook, but she had a few specialties. Her pasta with arugula is on my top five pastas list—for its taste first, but also because it is molto veloce— very fast. Serves 4 to 6 Bring a pot of water to boil, salt it, and then add the spaghetti. Cook until al 1 pound spaghetti dente and drain, reserving ½ cup of the 11/ cups heavy cream 2 pasta water. 1 / teaspoon salt 2 While the pasta is cooking, in a large 1 skillet over low, heat the cream with salt / teaspoon pepper 2 1 bunch arugula, chopped and pepper. When the pasta is done, add the arugula to the cream, and let 2 ounces (1/2 cup) grated them heat for 3 to 4 minutes. Stir in the Parmigiano-Reggiano drained pasta and parmigiano. Add a 8 slices of pancetta, little pasta water if needed, then, just cooked and crumbled before serving, incorporate the pancetta. Serve immediately.

Recipes for Cakes, Cupcakes, Whoopie Pies, and Cookies from Brooklyn’s Beloved Bakery
Dawn Casale and David Crofton
Just as the Fat Witch Brownies cookbook successfully broke out a local favorite, One Girl Cookies shares the jewel-like cookies, cakes, whoopie pies, and more of the beloved Brooklyn, NY, bakery with a devoted following. One Girl Cookies started as just that: one girl making cookies. Dawn Casale left her job as a women’s accessories manager at Barneys New York to dive into the sweeter side of life—and her beautifully made seasonal cookie collections were an instant hit. Like BabyCakes, but with butter and eggs, One Girl resonates with dessert lovers looking for something unique. Deeply invested in family, Dawn incorporates heirloom recipes and stories into her baked goods and the shop’s décor. Each cookie is named for someone special: Lucia (Espresso Caramel Squares with White & Dark Chocolate Swirl) is in honor of Dawn’s beloved grandmother; and Lana (Bittersweet Chocolate Sandwiches Filled with Raspberry Preserves) is named after Dawn’s favorite teacher, who was a little bitter but mostly sweet. Dawn’s family life and bakery are inseparable; it is only fitting that when she hired David Crofton, a professional baker, to expand the business, she found the love of her life—a sweet side story in this charming book. Together in One Girl Cookies, Dawn and Dave share the shop’s most popular recipes, from cookies, cakes, pies, and tarts to the best from the cafe’s breakfast menu—and of course their famous whoopie pies (even the coveted pumpkin ones with maple spiced filling) are also included. Known for her beautiful, personal gift packaging incorporating old family photos and grosgrain ribbon, Dawn also gives tips and ideas for making and wrapping custom presents for any occasion. With 70 recipes and 50 color photographs, One Girl Cookies will inspire enthusiastic home bakers who want old-fashioned family and modern recipes to add to their favorites. DAWN CASALE and DAVID CROFTON are the owners of One Girl Cookies bakery in Brooklyn, New York, which has been featured in the New York Times, Martha Stewart Weddings, and Real Simple, among other publications. They live in Brooklyn with their son, Nate. Visit them at www.onegirlcookies.com.

I developed such an intimate relationship with my cookies that it just seemed plain wrong not to give them a proper name. And so I did. Lucia, Lana, Penelope, Miranda, Susanna, and Juliette were born to bring happiness
into the world. Lucia, my great-grandmother’s namesake, is a layer bar comprised of buttery shortbread, espresso-spiked homemade caramel, and swirls of bittersweet and white chocolates—not just another pretty face, and undeniably decadent as well. The spiciest of the bunch—with candied and powdered ginger plus cinnamon and nutmeg—has a natural, no-frills way about it, so the moniker Susanna seemed most fitting. My idea was to create something that is a tribute, an homage of some sort, to my family, who taught me that food is far more than nourishment for the body. What better way to recognize that than by adorning my boxes of cookies with photos of them? One is of my paternal grandmother (Nanny) and her sister. They are in their late twenties and clearly ready for a special occasion, replete with fancy hats, coats, and red lipstick. These photographs could just as easily tell someone else’s story. My customers see their own families on the boxes, and the cookies that fill them are reminiscent of the Christmas cookie platter they share at their gathering.

The Easy No-Knead Way to Make Spectacular Pizza at Home
Jim Lahey with Rick Flaste
Just as he did for bread, Jim Lahey—one of the country’s premier bakers— revolutionizes pizza at home with fabulous recipes based on his legendary no-knead dough recipe. The mastermind behind the foolproof no-knead breadmaking technique that was first featured by the New York Times in 2006 (and subsequently e-mailed around the world), now turns his talents to pizza. Jim Lahey, the baking genius behind New York’s celebrated Sullivan Street Bakery and Co., his pizza restaurant located in the city’s Chelsea neighborhood, makes professional-quality pizza not only possible but also incredibly easy at home. For Lahey, a great pizza starts with a superb crust. The slow fermenting method of his simple dough recipe results in a rich, chewy-crisp crust that chars nicely in a hot oven. Building upon this foundation, Lahey thoughtfully constructs pizzas with keen playfulness. My Pizza includes all of the recipes that have put Co. on the map: Corn and Tomato, Coppa and Fennel, Potato and Leek. Lahey’s whimsical take on pepperoni pizza doesn’t include the cured meat we all know, instead riffing on “pepperoni” as the Italian plural for pepper: the pizza has red pepper puree, ground lamb, and pecorino. Even the Pizza Margherita is a revelation, owing to an exceptional sauce and the freshest mozzarella. Recipes for toasts and salads—Cannellini Bean Toast, Bibb and Roasted Squash Salad—as well as dessert—Olive Oil Cake, Vanilla Gelato—round out the book. With 75 color photographs, My Pizza unlocks the secrets of great, easy pizza at home and is destined to become an instant classic. JIM LAHEY studied sculpture before learning the art of bread baking from bakers in Italy. In New York City, he opened the Sullivan Street Bakery in 1994, and Co., a pizza restaurant, in 2009. Lahey and his businesses have been featured in Vogue, Saveur, and the New York Times, and he has appeared on the Martha Stewart Show and NBC’s Today Show. His first cookbook, My Bread, was a Gourmet Cookbook Club selection. RICK FLASTE, the first editor of the Dining Section of the New York Times, has collaborated on several cookbooks and books.

With this book, I expect you to be able to make pizzas at home
every bit as attractive and alive with flavor as the ones I produce in the restaurant and my own home kitchen. The pies should look terrific and they should be fun—like the bird’s-nest pie, which boasts shaved asparagus with cheese and quail eggs, or the pepperoni, which has no pepperoni sausage on it, but rather a red pepper puree with a topping of lamb sausage meat. I want you to see how unfussy just a handful of familiar ingredients can be, and yet how transcendent, too, if selected and combined with skill. (That’s the true miracle of genuine Italian cooking: elevating the ordinary to the extraordinary.) I hope you will engage in this with high spirit, optimism, and anticipation. Don’t be intimidated; making a pizza is not haute cuisine. It requires surprisingly little effort— especially if you use my simple no-knead bread recipe for the crust—and, once the toppings have been prepared, just a few minutes of cooking. After you’ve mastered my home kitchen techniques (I broil rather than bake, for instance) and experienced the excitement of a deeply flavored, often innovative pizza, you’ll be able to let your own creativity take flight.

Quick and Simple Recipes to Revamp Dinner
Giada De Laurentiis
For the first time, bestselling author and beloved Food Network star Giada De Laurentiis tackles weeknight cooking with recipes that come together quickly— all in her signature fresh style. As Jade grows up and schedules get busier, Giada has developed fantastic go-to recipes to get a delicious meal on the table in a flash. Here is Giada at her most inventive—and at her most laid-back. Flavor, freshness, and fun take center stage while cooking times, pots dirtied, and stress are kept to a minimum. All of the soups, sandwiches, pizzas, pastas, meat, and fish dishes come together quickly, most in half an hour or less. If you have eggs on hand but not much else, you can still pull together a great meal with the Breakfast for Dinner chapter. Leftovers are reinvented into healthy yet hearty main-course salads such as Roasted Salmon, Snap Pea, and Cucumber Salad and Chicken, Bibb, and Arugula Salad with Raspberry Vinaigrette. While Giada’s recipes remain predominantly Italian, some California-global influences sneak in, as they also now do on her show, including Spicy Mint Beef and Thai Turkey Lettuce Wraps. Even desserts are quick to mix and bake, should a weeknight craving—or a last-minute school bake sale—strike. Where Giada at Home gave readers a peek into Giada’s home life—with shots of her and Jade making pasta, and Todd helping Giada at the stove—Weeknights with Giada is an even more intimate look into her day-to-day family life. Chock-full of gorgeous color photographs, Weeknights with Giada will be a new favorite for longtime fans—and a new kind of handbook for home cooks everywhere. GIADA DE LAURENTIIS attended the Cordon Bleu in Paris, and then worked in a variety of Los Angeles restaurants before starting her own catering company, GDL Foods. Giada is the author of the New York Times bestsellers Everyday Italian, Giada’s Family Dinners, Everyday Pasta, Giada’s Kitchen, and Giada at Home and the host of the extremely popular Food Network shows Everyday Italian and Giada at Home, as well as a judge on The Next Food Network Star. Weeknights with Giada is her sixth book.

I definitely don’t have time anymore to cook for hours every day—not if I want to spend time at the table with Todd and Jade.
But I still love food and cooking and want to eat a nice dinner! So I’ve really shaken up my weeknight repertoire to include only dishes that I can pull together after a full day. All of these recipes (except the sides and desserts) make main-course servings. And they can all be accomplished in under an hour—with most on the table much faster than that: Rustic Vegetable and Polenta Soup, a hearty soul-warming one-pot dish, cooks in under twenty minutes; Lemony White Bean, Tuna, and Arugula Salad is a great meal that’s quickly assembled from pantry and fridge essentials; Ham, Gruyère, and Apple Panini are gooey, cheesy, crunchy, and delicious in ten to fifteen minutes; Spicy Linguini with Clams and Mussels is a fifteen-minute-or-less spectacular pasta; and you can’t beat Grilled Sirloin Steaks with Pepper and Caper Salsa, which are also ready in just fifteen minutes. This is what weeknights look like in my house. I hope these recipes inspire you and your family to gather around the table (or picnic blanket!) for some fantastic dinners—and, most important, a whole lot of fun.

Sophisticated Homes Inspired by the Ocean
Tim Clarke with Jake Townsend
For lovers of the seashore and fans of clean, modern, inventive design, celebrated Santa Monica-based interior decorator Tim Clarke illustrates how to infuse inspiration drawn from the coastal lifestyle and the fantasy of the “perfect beach house” into any space, regardless of size or location. There are few people in the world who have captured the essence of coastal living the way that superstar interior designer Tim Clarke has. In the fifteen years that he has been creating residential environments for Hollywood celebrities, power brokers, and socialites, the Tim Clarke brand has become synonymous with breezy, relaxed elegance. With photographs by acclaimed interiors photographer Noah Webb, this lavishly illustrated home design book shares Tim’s aesthetic and philosophy as seen in more than 15 spaces, where clean lines, organic shapes, a mix of hard and soft textures, and colors inspired by the sea and the sand create a sense that these places are at once spacious and restful. TIM CLARKE is an interior designer in Santa Monica, California, who has created interiors for many Hollywood celebrities and whose work has been featured in leading publications including Elle Décor, House Beautiful, Veranda, Town and Country, and the Los Angeles Times. His design firm, TCI, has a clientele base that includes leaders in entertainment, business, and sports, and his eponymous Santa Monica retail location sells one-of-a-kind beach-inspired furniture and curios. Writer JAKE TOWNSEND has contributed to the Los Angeles Times and Condé Nast Traveler, among others, and he is the author or co-author of 10 books, including many of the acclaimed Cool Hotels series.

The Homemade Pantry
101 Real Foods You Can Stop Buying and Start Making
Alana Chernila
On a mission to kick her family’s packaged-food habit, Alana Chernila learned that, with a little determination, anything she could buy at the store could be made in her kitchen—and the homemade versions were tastier and more healthful and didn’t take that long to make. In her debut cookbook, Alana Chernila collects recipes for 101 everyday staples, organized by supermarket aisle—from crackers to cheese, cake mix to sauerkraut, and mayonnaise to Oreos. In beautiful prose that captures the everyday humor and foibles of family life, Alana both inspires and guides the reader to make delicious everyday items. The Homemade Pantry is a celebration of food made by hand—mozzarella that is stretched, fat lasagna noodles rolled from flour and eggs, fresh tomato sauce that bubbles on the stove—many of which can be used in multiple dishes. Alana also tells readers about how she uses her most helpful kitchen gadgets and offers sidebars on canning and flavoring yogurt. With her patient and humble advice, including her own tense moments in the kitchen, The Homemade Pantry, with its rich full-color photography, will encourage readers to step into their own kitchens and think twice before buying foods they can make at home. ALANA CHERNILA writes, cooks, sells fresh vegetables, teaches cheesemaking, and holds Shakespearean readings in her home kitchen. She created her blog, EatingFromTheGroundUp.com, in 2008. Alana is a graduate of St. John’s College in Santa Fe and lives in Great Barrington, Massachusetts, where she is a selectman, with her husband and two young daughters.

Mayo nnais e
what to do
Whisk together the egg yolk and 1 teaspoon of water in a medium mixing bowl. Using a measuring cup with a spout, pour a few drops of the olive oil into the egg yolk and whisk vigorously. Then add a few more drops and whisk again. Continue this until you have a consistently thick yellow sauce; then add greater amounts of oil at once. Add a squeeze of lemon and pinch of salt, whisk again, and taste. Adjust the lemon and salt to suit your taste. Whisk in the mustard, if using.

the raw materials 1 • beegg yolk (this won’t cooked, so good
and local if possible)

• 1 cup olive oil of lemon • Squeeze taste juice, to • Salt, to taste • Optional: 1 teaspoon Dijon mustard

tense moments
There is a moment when your mayonnaise could separate or break. If you have a watery mixture of egg and oil, the culprit is most likely over-hastily pouring the oil at the beginning of the process. Don’t worry—the mayonnaise is still savable. Crack a new egg yolk into a clean bowl, and very slowly pour the broken sauce into the yolk while whisking, just as you did the first time with the olive oil. Stay patient while you pour, and it will work for you the second time.

IntroductIon
Drawing is a fun and satisfying way to express your creativity, but learning to draw often appears overly complicated and intimidating. A beginning artist needs a solid foundation in artistic principles, but why can’t those principles be clearly explained and illustrated? Here is a complete drawing book for the beginning artist that focuses on getting you drawing right away, while giving you all the tools you need to build a solid foundation in art. In working through this book, you will learn how to “see” like an artist, in terms of form, line, and shadow. Each chapter builds upon earlier lessons, so that the experience of learning to draw is never too complicated. Confidence will replace your earlier doubt as you learn techniques that work, such as how to combine basic geometric and organic shapes to create almost anything, how to add depth and shading to your drawing, and how to handle composition, form, and perspective. Finally, you’ll learn to draw the human body as a graceful and expressive figure—the ultimate challenge for a beginning artist.

ver the last decade, a number of new patents have recognized research in renewable bio-based and biodegradable materials as replacements for the petroleum-based solvents that have been in common use in a myriad of industrial applications (including agriculture, pharmaceuticals, food additives, biofuels, paints, coatings, and cleaners). Many of the new, highlyeffective solvents, including ethyl lactate, methyl soyate, and d-limonene, are based on such food stocks as corn, soybeans, and citrus fruit. Thanks to these recent developments and stricter federal Environmental Protection Agency (EPA) and Occupational Safety and Health Administration (OSHA) standards, printmakers today can feel comfortable knowing that if they educate themselves and their students about the new biosolvents and use a little common sense, they can safely continue to make fine art prints that meet professional technical standards. omeone once said that history is useless if you do not learn from it. Knowing what we now know about the consequences of teaching with hazardous materials and being aware of products that are safer yet equal to the task, we have no excuse for not fully embracing this new technology and requiring our students to be responsible in the studio.

Get InspIred
With your camera ready, it’s time to start thinking about what to shoot. How do you see the world, and how do you want to share that vision in your images? We encourage you to keep a visual journal and start compiling things that inspire you. rip up magazines, collect images (not just photographs), and start to learn what colors go together, how lines work to direct your eye, what to include in a shot as well as what to leave out. You will start to see themes arise and can then look for those elements of color, tone, and subject in your daily life. soon you will start seeing them everywhere, and before you know it, you will be developing your style. If you get stuck for what to shoot, go for a walk and take photographs of the world around you—shadows, details, and light. Another great thing to do is to start an idea collection. Fill a bowl with words that are cut or ripped from magazines and other publications. When you feel stuck on what to shoot, pull out a word. then create photos or a photographic story around that word and the colors around it on the scrap.
