Vegetarian Variations on Stuffed Eggplant (Sheikh el Mahshi)

See the normal version of the Sheikh el Mahshi recipe for the overall method. This just summarizes some variations to make a vegetarian version. You can replace the meat with any combination of the following ingredients: y y y y y y Onions & garlic Diced mushrooms Diced Zucchini Dice yellow summer squash Diced eggplant Could try cooked rice too.

The onions, garlic and mushrooms seem core to me; other additions are optional, but it probably pays to add at least one or two. These should be sauted (water drained first from ingredients that require it - like eggplant and squash) to prepare, then used in place of the meat filling!

NOTES: These are mentioned in the main recipe, but it bears repeating: Parsley, cinnamon, allspice, garlic, salt and pepper are essential, core ingredients to capture the flavor of this dish. And, of course, the tomato puree/sauce mixture. I noticed that the main recipe uses garlic powder - we rarely do, generally mashing fresh garlic into a paste instead/
