Ingredients: 1 lb. Ground Beef 3 cups Cheddar Cheese grated 4 1/2 oz. can Olives chopped 1 Onion chopped 10 Mission® Corn Tortillas 2-10 oz. cans Enchilada Sauce
Instructions: 1. Brown ground beef. Set aside some olives for garnish. In a large bowl combine chopped onion, olives, 2 1/2 cups grated cheese, 1 can enchilada sauce. Add cooked ground beef to the mixture. 2. Cover the bottom of a 9 x 13 inch pan with 5 tortillas. Spoon meat mixture over tortillas. Place remaining 5 tortillas on top of meat mixture. 3. Pour the other can of enchilada sauce over it, and top with remaining cheese. Bake at 350 degrees F for 20 minutes. Garnish with olives.
Ingredients: 2 cups Shredded Beef or other filling 12 Corn Tortillas 1/2 cup Corn or canola oil (optional - soft tacos aren't fried) 2 cups Chihuahua or Monterey Jack Cheese, grated 1 Tomato, diced 1 bunch Green onions, chopped 1/2 head Lettuce or cabbage, shredded 1 cup Salsa Mexicana and/or Salsa Verde

tomatoes and top with cheese. Before tortilla becomes crisp. Add shredded lettuce.Heat filling until steaming. Remove from oil and drain on paper towel. Repeat with all 12 tortillas. Turn and fry lightly on the other side. Repeat for all tacos. using tongs and a fork to hold it steady and crisp the folded end. bend it in half. onions. Place one to two tablespoons filling mixture inside taco shell.immediately when added to it. Serve immediately. . Fry tortilla lightly on one side.
