Method Take 01 kg whole chicken, put cut mark on it. Prepare the marinating, take a bowl, put 01 tbs ginger & garlic paste, salt to taste, 01 lemon juice, garam masala powder, 01 tps red chili powder, tps turmeric powder, tps crushed black pepper, cup yogurt & 01 tps oil, mix it well, now rub the paste on to the chicken properly, leave it a side for hours. Now prepare the gravy masala with , take deep pan, put on the fire , put 02 tbs oil, as the oil get hot add ginger & garlic paste 01 tbs , stir it add the 01 cup finely chopped onion, stir it till it get golden brown add the tps turmeric powder, 01 tps red chili powder, crushed black pepper tps, 02 tbs tomato paste 03 nos finely chopped green chilies , salt to taste & chopped green coriander leaves, stir it , cook on low heat, till the ingredients is well cooked & combined. Now fill the cooked rice with almonds & resins into the chicken, seal the chicken from its back with tread. Now take wok, put 01 oil in it, heat it on medium fire, put the marinated chicken into the hot oil fry, and fry it till the chicken get golden color. Remove it from the hot oil. Put the fried chicken into the masala gravy, fold the masala to the chicken & transfer to a baking pan. Bake it at 200 c preheated oven for 15 minutes & 350 f in gas oven for 20 minutes. Serve it on a platter with Roasted tomatoes & roasted Potatoes.

Method 1.Take 01 kg chicken, cut into 1x 8 pieces.. 2.take a bowl, put yoghurt, salt & pepper to taste, ginger & garlic paste, turmeric powder, red chili powder, crushed red chilies, roasted cumin crushed seeds, roasted crushed coriander seeds, garam masala powder, pinch of Nut meg, tps saffron color, 01 lemon juice, finely chopped green chilies & 5 tbs oil. Mix it well. 3.Put the chicken pieces into the tandooori masala, mix it properly. Leave it for rest for 15 minutes. 4.Take deep pan or a baking try. Pre heat the oven to 180 c for electric oven & 350 f for gas oven, put the marinated chicken into the oven to bake, bake it for 20 minutes. 5.Serve it hot from oven with hot Nans & chapattis. Share Jalfrezi chicken Ingredients Boneless chicken (cut into 1 inch cubes) kg Capsicum (cut into small squares) 1 Onion (cut into small squares) 1 Egg 1 Tomatoes chopped 2 Green chilies chopped 4 Oil cup Garlic paste 1 tsp Chili powder 1 tsp Salt 1 tsp Chili sauce 2 tsp Ketchup 2 tsp Crushed black pepper tsp Coriander leaves chopped 2 tbsp Method Marinate kg chicken cubes with 1 tsp salt, 1 tsp chili powder, tsp black pepper, 2 tsp chili sauce and 2 tsp ketchup for 30 minutes, heat oil in a wok, fry 1 tsp garlic paste with 2 chopped tomatoes for 5 minutes, add marinated chicken, cook till chicken is tender and oil comes on top, in a frying pan heat 2 tbsp oil, fry cubes of capsicum and

onion for 2 minutes till soft, make omelet with 1 beaten egg, a pinch of salt and a pinch of black pepper, cut into tiny cubes, when chicken tender fold in the fried cubes of capsicum and onion along with chopped pieces of omelet, garnish with 2 tbsp chopped coriander and 4 green chilies. Serve hot.

Handi Murgh Ginger Ingredients Chicken (cut into 16 pieces) 1 kg Onion chopped 1 cup Green chilies chopped 4 Tomatoes chopped 4 Oil cup Salt 1 tsp Garlic paste 1 tbsp Turmeric tsp All spice tsp heaped Coriander leaves chopped 2 tbsp Ginger finely chopped 2 tbsp Chili powder 1 tsp Method In a clay pot put 1 kg chicken, 1 cup chopped onion, 1 tbsp garlic paste, 1 tsp salt, tsp turmeric, 1 tsp chili powder with cup of water, cook covered on low flame for 15 minutes until chicken half done, add cup oil, fry well for 5 minutes, add 4 finely chopped tomatoes and fry well till oil comes on top, lastly add 4 chopped green chilies, 2 tbsp chopped ginger, tsp all spice and 2 tbsp chopped coriander leaves.

Peach Delight Made By Kiran ( Sunday 10th April 2011) Ingredients 1.biscuits 2pkts 2.butter 2-3 tbsp 3.cream(tetra) 2 pkts 4.peaches 1 tin 5.caster sugar 5-6 tbls 6.ice cream half liter 7.walnuts for garnishing METHOD: Mix the crushed biscuits with butter. Spread on the serving dish and press to make the base.Chill for 10 mins. Whip cream adding caster sugar till it becomes fluffy. Spread half of the whipped cream on the biscuit base. Add a layer of sliced peaches.

Mix the remaining whipped cream with your choice of ice cream and pour over the peaches. Garnish with walnuts and peach slices. serve chilled.

Kashmiri mutton pulao By Shireen Anwer 20th August 2011 Ingredients Mutton kg Rice kg Oil cup Onions 2 sliced Green chilies 4 chopped Ginger garlic paste 1 tbsp Yogurt 1 cup Salt 2 tsp heaped Ingredients for paste Poppy seeds 1 tbsp Green cardamom 8 Black cardamom 2 Fennel seeds 1 tsp Cumin seeds 1 tsp Black pepper 10 Cloves 8 Cinnamon 2 sticks Method Wash rice and soak for 30 minutes, cook mutton with 5 cups water and 1 tsp of salt till tender, remove and keep aside. Grind all the ingredients for the paste together and keep aside. Heat oil fry sliced onion till light golden add ginger garlic paste, chopped green chilies with mutton pieces and the grinned paste, fry well adding little left over stock, add yogurt fry for 5 minutes add soaked rice, 1 tsp heaped salt and 4 cups leftover stock. Boil cover and cook on low heat till rice is well cooked and water dries. Serve hot.

Gajar ka Halwa by Zubaida Apa 21st August 2011 Ingredients: Carrots kg Dry milk powder 1 cup Small cardamom 6(grind with 1 tsp. sugar)

Sugar 1 cup Finely chopped peeled walnuts 1 cup Boiled almonds 10 Boiled Pistachios 8 Oil 1 cup Method: 1. Peel all the carrots and grate them. 2. Then dry their water on low stove. 3. Heat oil in pan. Add small cardamom in it, as the aroma arises add carrots in it. 4. Fry well then add dry milk, sugar and walnuts then fry more on low stove. 5. As the oil separates, rub oil in a tray and place the halwa on it. 6. Garnish with pistachios and almonds. 7. Delicious Gajar ka halwa is ready to serve.

Fruit Kebab Skewers With Honey Yogurt Dip By Chef Zakir (16th July 2011) Ingredients: Pineapple cup Mangoes 2 Lychee 6 Sapodilla (Chiko) 2 Cottage cheese (cubed) 1/2 packet Peach 2 Method: 1.Cut 1 tin pineapple, 2 mangoes. 1 banana, 2 cheeko and 2 peaches into small pieces. 2.On wooden skewers, alternately thread them. 3.Chill until required or place on a BBQ or grill and cook for 2 minutes on either side. For The Honey Yogurt Dip: Ingredients: Plain yogurt 1 cup Cinnamon 1/2 teaspoon Vanilla extracts 1 tsp Lemon zest 1 Honey 3-4 tbsp 1.Beat 1 cup yogurt, tsp cinnamon, 1 tsp vanilla extract, 1 lemon zest and 3-4 tbsp honey in a small bowl and whisk to combine. Oreo cookies crushed 2 cups Melted butter 3 tbsp Cream cheese 1 cup Gelatin 1 tbsp heaped Water cup Condensed milk cup Chocolate melted 1 cup Fresh cream whipped 1 cup Method Mix melted butter and crushed cookies in a bowl and press them onto the bottom of the 9 inch square pan, lined with foiled, beat cream cheese until smooth, gradually add condensed milk and melted chocolate , mix in well, lastly fold in the whipped cream, spoon this mixture over the biscuits crushed, freeze for 2 hours. Remove from freezer 15 minutes before serving, cut into small squares, garnish with swirls of whipped cream chocolate decoration and chocolate syrup around the square.

Chicken Steaks By Zubaida Tariq (Sunday 29th May 2011) Ingredients: Chicken fillet 4 Lemon 2 Mustard powder 1 tsp White pepper powder 1 tsp Oil 1 tbsp Soy Sauce 2 tbsp White vinegar 2 tbsp Honey 2 tbsp Salt To taste Method: Slightly chop 4 pieces of chicken fillet using a heavy knife. Marinate these fillets with juice of 2 lemons, 1 tsp mustard powder, 1 tsp white pepper, 1 tbsp oil, 2 tbsp soy sauce, 2 tbsp white vinegar, 2 tbsp honey and salt to taste. Heat the griller and grease it. Spread chicken steaks on the griller. When golden brown, brush them with oil. Serve these delicious chicken steaks with garlic bread.

Sugar Free Brownies By Rida Aftab (Sunday 5th June 2011) Ingredients: Flour 1cup

Eggs 2 Porridge cup Butter 100gms Baking powder 1tsp Cocoa powder 2tbsp Artificial sweetener 4tbsp Method: In a bowl whisk 100gms butter, 4 tbsp artificial sweetener, 2 eggs and 1 tsp baking powder. Now add 1 cup flour, 2 tbsp cocoa powder and cup porridge and fold it. Now spread this mixture in a baking tray and bake it in a pre-heated oven for 20 minutes at 180C. Sugar free brownies are ready to serve. Egg Less Chocolate Mousse By Shireen Anwer (Saturday 11th June 2011) Ingredients Skimmed milk 2 cups Sugar 5 tbsp Chocolate 2 ounce Corn flour 1 tbsp Coco powder 2 tbsp Gelatin 1 tbsp Water cup Vanilla essence tsp Cream whipped 4 tbsp Method 1.Mix cocoa powder and corn flour in cup milk to make a smooth paste. 2.Boil the remaining milk in a saucepan. Add the corn flour paste stir continuously until the mixture thickens . 3.Add 50 gm chocolate, cook for 5 minutes till the chocolate melts 4.Dissolve gelatin in cup water, mix the dissolved gelatin with the chocolate custard 5.Beat the thick chocolate custard and fold in 4tbsps whipped cream and 1/2tsp vanilla essence 6.Mix gently and transfer to a serving dish or individual glasses 7.Refrigerate till set. Garnish with whipped cream and chocolate 8.The egg less chocolate mousse is ready to serve

Whole Wheat Chicken Pizza By Chef Zakir (Saturday 18th June 2011) Ingredients Whole wheat 1/2kg Sugar 15 gram Yeast 20 gram White Butter 20 gram Salt 20 gram

For Chicken Chicken boneless 300 gram Crushed red chili 1 tbsp Ginger garlic paste 1 tbsp Olive oil 2-3 tbsp Water 1 cup For pizza sauce Tomato paste 1 cup Garlic paste 1 tbsp Crushed red chili 1 tbsp Oregano tsp Thyme tsp Olive oil 3 tbsp Salt to taste For topping: Mozzarella cheese 1 pkt Onion 1 Oregano tsp

For Pizza Dough: In kg flour, add 20gms yeast, 20 gms butter, 20 gms salt, 15gms sugar and water as required. Knead the dough. Cover this bowl with plastic wrap and leave for a while. For Chicken: In a wok, cook diced chicken pieces, ginger garlic paste and olive oil. When chicken changes its color, add 1 cup water. Cover and let it cook. After 8-10 minutes, turn the flame up and let the water dry. Chicken topping for pizza is ready. For pizza sauce: In 3 tbsp olive oil, add 1 tbsp garlic paste and fry. Then add tsp oregano, tsp thyme, 1 tbsp crushed red chili, salt to taste and tomato paste. Then add cup water and cook on low flame. When the water dries, the sauce is ready. For topping: Grease pizza pan. Spread the dough in it, and apply oil on its edges with a brush. Now spread pizza sauce on dough. Put chicken cubes, slices onions and mozzarella cheese on top of it. In the end, sprinkle tsp oregano. Put the baking tray in oven.

Bake for 12-15 minutes at 200C. Delicious whole wheat chicken pizza is ready to serve.

White Butter Rice (Sunday 9th Oct 2011)


Ingredients 1-1/2 cup rice cup oil cup butter 1 medium onion 1 small tomato 3-4 green chilies tsp cumin 8-10 whole black pepper 4-6 cloves 1 inch cinnamon 1 large cardamom 2-3 green cardamoms 1 tsp salt 1 tsp tara garam masala Method In a pan heat cup oil to fry 1 medium onion, tsp cumin, 8-10 whole black pepper, 4-6 cloves, 1 inch cinnamon, 1 large cardamom and 2-3 green cardamom for few seconds until onions color changes. Then add 1 small tomato, 2-4 green chilies, 1 tsp salt and 1 tsp tara garam masala in it When tomatoes are tender, add water as required and cook till it reaches its boiling point. Also add rice (soaked half an hour before preparing the recipe) and cook on low flame. When rice water starts to evaporate, add cup butter and allow simmering for 6-8 minutes. Delicious White Butter Rice is ready to serve.

Mango Mousse
Chilled water cup Gelatin powder 15 gm Mango 2 Cream 1 cup Sugar cup Yogurt cup Lemon juice 1 tbsp. For garnish: Mango 1 cup Method: In a cup mix gelatin with water and leave it for 2 to 3 minutes. Now in a jug add mango, sugar, yogurt and lemon to blend and take it out. Put gelatin mixture in pan and melt it on low flame. Pour

it in the mango batter and mix it. Whisk the cream and slightly fold it in mixture. In the end set them in a glass and refrigerate them.

Fajita pizza
For pizza Dough: Luke warm water 1- 1/3 cup White flour 4 cup Dry milk cup Oil 240 gm Salt tsp Sugar 2 tbsp Dry yeast 2 tbsp Oil 2 tbsp For pizza tomato sauce: Tomato 350 gm Oregano 1 tsp Salt 1 tsp Sugar 1 tsp Fresh basil 1 tbsp Garlic paste 1 tbsp Black pepper powder tsp For stuffing: Crushed garlic 4 cloves Green chili chopped 4 Capsicum sliced 1 Red onion sliced 1 Chicken breast slice 250 gm Mozzarella cheese 200 gm Cheddar cheese 200 gm For fajita marinating: Tara orange squash 1 tbsp Lemon juice 1 tbsp Cumin powder tsp Salt tsp Oil 3 tbsp Method: In a mixing bowl add 4 cup of white flour, tsp of salt, cup of dry milk, 2 tbsp of sugar, 2 tbsp of yeast and 2 tbsp of oil and knead it with 1 1/3 cup water to make dough and leave it on warm place for 30 minutes and it should be covered. When dough rise, again knead it and divide them in 4 parts. Now grease pizza pan with oil and make balls and again leave it for 30 minutes. For pizza tomato sauce, in a blender add 350 gm tomatoes, 1 tsp of oregano, 1 tbsp o fresh basil, 1 tbsp of ginger garlic paste, 1 tsp of salt, 1 tsp of sugar and tsp of black pepper powder and bland it to make sauce. Now cut chicken in slices and put it in a bowl and add 1 tbsp of tara orange squash, 1 tbsp of lemon, 3 tbsp of oil, tsp of cumin powder and tsp of salt to mix. Now grill it in a grill pan from both sides. Spread a layer of sauce then put 4 garlic cloves, 4 sliced green chili, 1

capsicum chopped and onion chopped, now put melted cheddar and mozzarella cheese on top. Serve it hot

Valentine pizza White flour 1 cup Oat meal cup Brown sugar 1 cup Egg 2 Oil 1/3 cup Whisk yogurt 1 cup Baking soda tsp Nutmeg powder tsp Clove powder tsp Cinnamon powder tsp Salt tsp Baking powder 1 tsp For topping: Strawberry cup Pineapple cup Orange peel cup Yogurt cup Homemade ricotta cheese cup Chocolate chip 1/8 cup Mint chopped 1 tbsp
Method: For dough in a bowl mix 1 cup white flour cup oat meal, 1 cup brown sugar, tsp of salt, 1 tsp baking powder, tsp baking soda, tsp of nutmeg, tsp clove powder, tsp cinnamon powder, 1/3 cup oil, 1 cup yogurt and 2 egg to mix. Now grease a pizza pan and pour mixture in pan and bake it on 180 c for 10 to 14 minutes. Now cool the pizza crust. In a bowl add cup yogurt and cup home made ricotta cheese to blend and spread it pizza crust. Now chop cup strawberry, cup pineapple and orange peel to garnish. Now put coriander and chocolate chip from top and serve.

Chowmins Ingredients: -1 pack noodles, boiled (any kind you like) -2 cups thinly sliced green pepper -1 cup thinly sliced carrots -1 medium sized red onion also cut in thin slices -2 cups shredded cabbage -about 2 chicken breasts cut into small chunks -2 tblsp crushed garlic -oil for stir frying vegetables and chicken. about 1/4 cup -salt to taste -3 tsp black pepper -1 tsp chopped red chillies or you can add 1 tsp crushed red pepper flakes -3 tblsp soy sauce -3 tblsp ketchup -1 tsp ajinomoto (chinese salt)
Directions:

- First of all boil your noodles in a good amount of water and salt. drain once cooked and set aside. -then in a wok, take your oil, heat it and add onions, fry them for a few minutes then add your chicken to it. When chicken is almost cooked, not fully cooked, add in your crushed garlic. -When the chicken is cooked and you see the garlic is very lightly golden, add your chilly flakes to it. -Then right away add in your green pepper, carrots, and cabbage. stir fry this for a couple mins (2 mins) and then add in your salt, black pepper, ajinomoto, soy sauce, and ketchup. fry this for another 2 mins, then add in your bell pepper along with your boiled noodles. Toss the noodles well and cook on high flame mixing the noodles for a minute or until the noodles look ready. Singaporean Rice One of my favourite pasta dishes, the combination of flavours in this meal is truly exceptional. This dish is made up of layers of rice, spaghetti, chicken cooked with veggies, mayonnaise sauce and topped off with garlic and green chillis fried in butter. I have tweaked a multitude of recipes until I finally came up with something that is to my liking. Not only does the dish appeal to the eyes, the aroma that wafts from the dish once its prepared is irresistable. This recipe serves 6 people (or 4-5 very hungry ones...lol) First prepare the rice. You will need 1 cup of rice, bring a pot of water to boil, add salt and 1 tbsp oil into it. Add rice that has been pre-soaked for 20mins. Boil until rice is almost done, drain the water and put the rice back into the pot. Cover and put to steam (on dum) for 15 minutes.

Then prepare the spaghetti. You will need 200gm spaghetti pasta. Boil as per package instructions, adding some salt and oil into the boiling water. Drain, then drizzle 1 tbsp of oil on the pasta to prevent it from clumping together. Put in a hotpot and set aside.

Then you can prepare the mayonnaise sauce. For this you will need: half cup mayonnaise of your choice 3-4 tbsp ketchup pinch of salt tiny touch of garlic paste for flavour 2 tsp red chilli powder Mix all these together and adjust taste. Set aside.

Now you can make the chicken and veggies gravy. You will need: half kg boneless chicken (preferably breast) cut into cubes capsicum chopped very finely (I used 1 red and 1 green for the colour combination) 1 carrot, cubed finely

1 onion chopped very fine half tsp ginger/garlic paste 2 green chillis chopped (if you don't want the dish too spicy you can omit this) juice of half a lemon splash of soya sauce 2 tsp black pepper half tsp cumin powder (optional) 2 tbsp chopped coriander 1 tsp red chilli flakes or chilli powder 1 tbsp ketchup 1 tbsp cornflour mixed in half cup water 3 tbsp oil salt to taste Heat the oil in a pan, add the onions and fry until they are translucent. Add the chicken, ginger and garlic paste. Fry for a few minutes until the chicken colour changes. Then add the capsicum and carrots. Stir fry until the chicken is about done (should take about 8-10 minutes). Add the green chillis, chopped coriander, soya sauce, ketchup and lemon juice, plus chilli flakes, salt and pepper. Cook together for 2 minutes, then add the cornflour mixed in water. Lower the heat and let the gravy simmer for a few more minutes. You can add some extra water if you want extra gravy or if you find it too dry. Adjust taste and turn off the heat. In a small pan, prepare the garlic and chilli topping. Take 3-4 cloves of garlic and chop them up into tiny bits. Then chop 2-3 green chillis. Add 1 tbsp butter to the pan and let it melt, then add the garlic and chilli. On low heat, fry these together for a few minutes until the aroma is great and the garlic is fried. Now comes the layering: Take a dish, pour the rice to cover the bottom. Then follow it with the spaghetti to cover the rice. Then pour the chicken gravy over the spaghetti. Now drizzle the mayonnaise sauce all around the edges and some in the center. Finally sprinkle the buttery garlic and chilli all over and serve! Fauzia's Kitchen Fun

Afghani Pulao
Ingredients Chicken 1 kg without skin, cut into 8-10 pieces Rice 3 cups Oil cup Ginger garlic paste 3 tbsp Onion kg Carrot 1, grated or julienned

raisins (half a handful)...soak them for a while n then fry with carrots in a little butter Salt to taste All spice 3 tbsp (cumin, cloves, black pepper, cardamon, n cinnamon) grinded White vinegar 2 tbsp (to boil with rice) Method Chop onions finely and fry in hot oil till golden brown. Add chicken, ginger/garlic paste and salt, fry for 5-6 minutes Add 1 cup of water and cook on low flame till the chicken is tender. In a big pan boil water and salt , when boiling add the rice and vinegar and boil until the rice is done. Drain the rice. Now grind the all spice roughlyArrange the boiled rice in the pan, pour the chicken over the rice, sprinkle with grinded all spice now add another layer of rice, sprinkle with all spice. Cover and put on low flame for a few minutes When the pilau is ready garnish with the fried carrots n raisins. CHIKEN TIKKA PIZZA RECIPE BY MASALA MORNINGS DOUGH INGREDIENTS Flour 200 grams( 2 cups) ,Instant yeast 1-1/2 tsp, Sugar 1 tsp, Salt tsp, Oil 3 tbsp, Milk powder 2 tbsp, Egg 1, Luke warm water as required( if milk powder not available, use warm milk and dont use water) Method for Dough: In a bowl mix everything together and knead to soft dough. Filling: Chicken tikka shredded 1 cup, Chopped onion 3 tbsp, Sweet corn 3 tbsp, Capsicum chopped 3 tbsp, Tomato chopped 3 tbsp, Olives 4 sliced, Oregano leaves 1 tsp, Cheddar cheese 1 cup, Mozzarella cheese 1 cup Method: 1. Grease 10 inch pizza plate spread with dough and bake blind for 10 minutes (optional) 2. Remove from oven cool slightly spread with pizza sauce then 3 tbsp cheddar cheese. 3.
