Preheat oven to 350 degrees F (175 degrees C). Line 20 muffin cups with paper liners. 2. Sift flour, baking soda and salt into a bowl. 3. In a separate bowl cream the butter and sugar until fluffy. Add eggs, yogurt and vanilla essence, and beat well to combine. 4. Add flour mixture and stir until just combine. Fold in strawberries. Spoon th e batter into the cupcake cases filling each case 2/3 of the way up. 5. Bake the cupcakes for about 20-25 minutes. Once ready, remove cupcakes from o ven and let them sit for 5 minutes before transferring them to a cooling rack. 6. Now the frosting, cream together the confectioners' sugar and butter until sm ooth. 7. Gradually mix in milk, vanilla and diluted food colorings until smooth and st iff, about 5 minutes. 8. Use a knife, small spatula or pastry bag to frost the cupcakes once cooled.
