JAN HAGEL COOKIES (Dutch Almond Cookies) 1 cup butter, room temperature 1 cup sugar 1 egg, separated 1 tsp

. almond or vanilla extract 2 cups flour 2 tsp. water ½ cup slivered almonds 1 tbsp. sugar ¼ tsp. cinnamon Cream butter. Add sugar, then egg yolk and extract; cream well. Sift dry ingredients. Gradually add dry ingredients. Place mixture on a greased 15” x 10” x 1” jelly roll pan. Use fingers to press dough into an even layer. Mix egg white and water, brush top of cookie dough. Sprinkle almonds over dough and press slightly into dough. Combine sugar and cinnamon; sprinkle over dough. Bake at 350 degrees for 10 – 15 minutes or until light brown. Cool in pan for just 10 minutes, then cut into rectangles, squares or diamond shape while still in pan. Remove cookies and cool on rack. Makes 5 – 6 dozen.
