Chicken in Charred Tomatillo and Green Chile Sauce

Serves 4 ½ lb tomatillos, husk removed and rinsed 1 serrano chile 1 jalapeno chile ½ poblano chile ¼ yellow onion ½ tsp cumin seed, ground 2 Tb cilantro, chopped Salt to taste 4 chicken thighs, boneless, skinless Serve with your favorite rice recipe or as tacos 1. Place the tomatillos, serrano, jalapeno, poblano, and onion on an ungreased cast iron skillet on medium heat and char all sides. 2. Remove the ingredients from the cast iron skillet and place in a blender with the cumin seed, cilantro and salt. Blend until smooth. 3. Season the chicken thighs with salt on all sides and place in a 2 qt sauce pot. Cover the chicken thighs with the sauce and bring up to a simmer. Reduce the heat to low, place a lid on the pot and simmer very gently for about 35 to 40 minutes. Serve with rice or tortillas. Enjoy!
