Café Egg Salad- June 7, 2009

Eggland's Best Eggs are on sale this week (BOGO) at Harris Teeter (HT). The sale, stacked with a doubled $.35/1 coupon (q) means cheap protein! Here is one good way to use those eggs: Prep Time: 5-10 minutes Serves: 4 people 8 ounces whipped Cream Cheese 1/4 cup Mayo Salt and Pepper to taste 1 tablespoon Dijon Mustard 1/4 cup finely chopped Celery 8 Hard-Boiled Eggs Mix everything together except eggs. Grate eggs into mixture using the large holes of a cheese grater and mix until incorporated. Serve on top of bread or salad greens along with a dill pickle spear. Enjoy! *I love egg salad, but I don’t like all the extra calories of mayo. I love this recipe because it cuts down on the fat and calories by using mostly cream cheese (I like to use light cream cheese) to bring it all together.
