Queens Palace Restaurant Introduces Irresistible Hairy Crab Menu
in Modern Shanghaiese Style
Its hairy crab season again! Acclaimed as a recommended restaurant in the prestigious Michelin
Guide Hong Kong & Macau in 2010 and 2011, Queens Palace Restaurant proudly presents an
array of tempting hairy crab and crab roe dishes to treat crab lovers. Hairy Crabs farmed at Taihu
are specially selected to ensure they are the lake's finest specimens - juicy, tender and weighing at
least 4 taels each. The ratio of meat and roe are just perfect for steaming or using on various
kinds of crab roe specialties.
Selected premium Taihu Hairy Crab
Chang Yan Wa, Executive Chef of Queen Palace Restaurant, strictly selects quality hairy crabs
from Taihu where provides a semi-wild environment for crab cultivation. Farmers plant natural and
farmed waterweeds in lake where allow the crab to rest. Also, extra snails and small fishes are put
into the lake as crabs staple food. Ideal Taihu crab features shiny shell, strong legs, and golden
claws with distinctive flavour.
Taste varies with gender
Male crabs are usually caught and served from mid autumn to late October as their meat is the
juiciest and jelly-like roe develops. November is the best time to eat female crabs as the roe is soft
before completely mature and remains creamy after steamed. All finest hairy crabs finally go to
Queens Palace Restaurant kitchen to treat hairy crab lovers.
