Jerk Seasoning Recipe

1 medium sized onion 1 Scotch bonnet pepper, seeds included 4 cloves of garlic 10-12 pimento (allspice) seeds 3 tablespoons fresh ginger (thumb-sized piece from the root) 2 tablespoons fresh thyme 1 teaspoon of cloves 1/3 cup vinegar 1/3 cup oil 1 ½ teaspoons salt Put all ingredients in a food processor and blend into a rough paste, about 30-45 secs. Use to season any meat or fish according to taste. When cooking items on a grill, throw 10-12 pimento seeds into the wood or charcoal to give extra jerk flavour.
